Great review and we are huge fans of Still Austin. We actually went to the Rickhouse, drilled some holes in barrels and picked a Still Austin single barrel for our Patreon Members that will be out this July! Get on Still Austin now because they are taking off! Cheers and Rock on!
I had the opportunity to try this when it was the limited run and I didn't like it. And their "regular" version was the first bourbon I liked the flavour of and opened me up to bourbon. I tried the cask strength again, much later on, and I liked it on that second tasting. It has some incredible flavours that, like Rex and Daniel mention, are not your normal, even cask strength, bourbon flavours.
Love this stuff and glad it’s local made to me! Great flavor and nose, Once I put a drop of water in my pour really opened up the flavor/nose made me a huge fan!
picked this bottle up from Total Wine after doing a tasting. I find this to be the most approachable and great tasting Texas whisky. I like Balcones and Garrison Bros, but this tastes more like a classic kentucky bourbon. I like it better then the non-barrel proof.
So far out of the ones I have tried from the "12 days of Texas Whiskey" the Still Austin was the only one I have liked. You guys should review the samples provided! That would be very interesting and educational.
Been done, check out Chamber's Bay in Washington, or Jefferson Ocean. Everyone knows what Jefferson does. Chamber's ages in Ricks that float on Puget Sound.
Best Texas whiskey I’ve had, bar none!!! Visited distillery 2/2022 and they have a great vibe going there!!! Recommend The Artist too and definitely visit the distillery in Austin, great experience!!! (Drink a Manhattan while touring facility!)
Great review I enjoyed the video Since Im a Excutive Chef I brought a bottle I added some fuji Apples, Granny Smith Apples and Fresh Cinnamon and Fresh Vanilla I let that rest over night then I strained the Still Austin I reserved the Apple I added some raisins and cranberry I added some Organic Farm Fresh Apple Juice and made a Still Austin Apple 🍎 Crannerry Raisin Cinnamon Vanilla glaze for my grilled pork chops. This glazed pair well with Ice Cream. Take Some butter just a little. Cut slice of pound cake and warm up in the melted butter in a frying pan remove pound cake, add scoop of Vanilla Ice Cream and top it off with the glaze .
Can you dunk barrels in salt water and then put whiskey in it instead? Or what about splashing salt water on the exterior of a filled barrel every now and then when its aging?
It sounds like you've only been to the Gulf around Texas and Mississippi (horrible beaches and water). Go to the Panhandle of Florida or at least Gulf Shores, AL and tell me the Gulf isn't great. On another note, I hope I can find this offering around here soon!
Do a Jefferson gents, chuck some barrels in a container, drill holes in it, and send it around the world on a containership! And loving your work by the way, always entertaining and informative, in equal measure.
Question: so I've added quite a few whiskeys to my infinity bottle, what kind of proof do you think it's sitting at? I add a 100 proof bourbon, a cask strength 108 proof bourbon, and then a 45 proof, and so on and so on. How does pairing different proof whiskeys together affect the overall proof? Does whiskey proof down whiskey?
If you don't know how much of each you put in there, there's no way to know without a proof & traille hydrometer ($12 on Amazon). But you can figure out how much total ethanol you put in there and figure out how much of the total percent volume you put in there. For example, 100 mL of jack Daniel's has 40 mL of alcohol in it (40% ABV) and 200 mL of maker's mark has 90 mL of alcohol (45% ABV) so the 300 mL in total has 130 mL of alcohol in it, so 130/300=43.33% ABV. It's basically a weighted average of all the ABVs you put in there. If you put the same volume of all whiskies in there, it's just a simple average.
Little sad that you guys haven't done any of the new crazy Jack Daniels whiskey that's come out the past year. They really trying to step up their game over there
Picked up a bottle from Seelbach’s last year. Nancy Fraley is supposed to be working with Still Austin - high hopes - it’s pretty good but drinks young - shows up on the finish.
There’s a company that ages wine in the water off the west coast, they charge a premium for that process. I’m sure it could be done for whiskey if it isn’t being done all ready. Of course there’s the Jeffersons Ocean whiskey aged on the water and there’s been experiments of different spirits shot into space. I thought the James T Kirk whiskey was one but alas it wasn’t 😢
Just did a tasting of this one, and got a huge Metallic note on it upfront and some muskiness behind it lol so far not too fond on the nose, but the Pallet was much nicer and smooth for a 2 year old which surprised me.
So your saying that drinking a full pallet of this whiskey makes it taste better?!!! And that you are only 2 years old?!!! Sorry, couldn't help myself. I love to indulge in bad readings. I'm working on this... issue. 😉
@@paulm749 If someones grammar bothered you this much, you must have a very sad and boring life to write all that just to make yourself sound smart, next time i will go to you if I need spell checking.

You can wind-surf in the gulf. You can also swim and dive, but you have to be at least a mile off shore. The water is nice and clear once you get away from the beaches.
Isn't aging close to the ocean kind of the principal behind Jefferson's ocean? They're not doing it in saltwater, but they're doing it while floating on the ocean.
I'd be interested in tasting the difference between aging in a humidified rick house vs a de-humidified rick house, same temperature. Or maybe just wrap a barrel in plastic sheeting.
I definitely got a christmas douglas fir on the note... and followed by a strong smell of when you open a fresh box of Whitmans chocolates. Took a couple pours to get past the bad initial taste.
Daniel was actually hinting towards stopping RWF for a bit prior to last weeks "comparison" episode, he has stated that 90% of all the whiskies to review in 2022 are rare so Fridays will be class specific comparisons, when they show up close in the review lineup.... ie: 2 rye, 2 corn, 2 bourbon etc comparisons, perhaps even 3 bottles.... who knows!
Quit simple, pick a bourbon you like and add 10% Ardbeg or Laphriag or whatever peated whisky you also like....The result is great and you'll do it for the rest of your life.
Could you just use a whiskey tote and fill it a bit with salt water then lower the barrel into it? Especially if you use a smaller barrel it should fit right in there
Does anyone else prefer the old Patron Saint of Whiskey animation where it looked like cherub Rex sh*t the dolphin through Daniel's head, in one ear and out the other? Instead of Rare Whiskey Friday, how about Accessible Whiskey Friday? Give us the reviews for recent commercial releases if you have them: Blue Spot, Redbreast Pedro Ximénez Edition, etc. That way when people search for reviews more newbies will be directed to your channel.
How does releasing the best whiskey a distiller can make reduce revenue? Just double the price of the product. Less bottles/labels used. Fewer employees/time needed to prep and ship. It's quite non-sensical. All whiskey artists don't need to be Andy Warhol's.
This is like the fourth episode with a yawning Daniel. Tbh it does make it seem like you are a disinterested in what is going on. Just take a nap before filming man
Good job Dan, Saving them from their alzheimer's,
More proof that they are basically mailing it in at this point.

Uhm, for the saltwater exposure, doesn't Jefferson's launch one of their bourbons on an Ocean voyage for some period of time?
Just got a bottle, so excited!

I found out that I love corn whiskey. I feel like a fraud.
Got it today for the first time. Love it!
Miss these two together
We have a distillery here in Washington that ages bourbon in a floating boat house. It’s called Chambers Bay bourbon.
Just bought some at Christmas. One of my new favorites. Amazing job on this one!! I might have to try some of the lower-proof ones?
Try von Payne black
On the salty aging idea, maybe swell the casks with ocean water, rinse out and fill?
I just ordered this bottle from Seelbachs. I have never had any Texas whiskey so I’m very excited to give it a try. Cheers
What's Growin on all you MB'S out there today?!!
What Rex is actually is saying is.... If you keep sippin', there is no finish.... Gotta love this guy 😂. Greetings from Holland
No nose, no flavor, no finish except burn. This was the biggest waste of $60 I've made in a long time. TERRIBLE.
GOOD MORNING YOU MB'S.... 🥃

Dang rex looks so cool. It's prob why he hasn't ever made a mistake cause he's soooo cool.
Some 55 gallon drums of saltwater around a rickhouse may have some impact. Not sure how many you wuld need vs amount of impact.

Too bad austin isn't "still austin anymore. What a great town it used to be.
Have you two EVER been to the Texas coast?
First texas whisky that i tried. And happened to be drinking it while watching the vedio. This bottle disappering quickly. A great bottle
Daniel, Barrel question. If you take a whiskey barrel apart can you get the stave to be flat or will they away bend back to the curve that is in them?
Check your audio connections!
Watching this and enjoying my 12 TX whiskeys, should probably be working
That stubby bottle with the light blue label that's above the Pinhook bottles makes me think it's tequila. No idea why but it just does.

A tub of water and epsom salt, you guys would be soaking in that all the time. So it would be the impact of saltwater and BO.
