I had pizza in Italy & it was so much better than any pizza I've had in the USA. Same with pasta. Italian pasta makes American pasta seem like shoe leather.
When yeast was hard to get during the Covid19 lockdown, I put about 1/2 packet of yeast in a quart mason jar with a cup of water and 2.5 cups of flour to make a starter. You can use 1 cup of starter and then replenish the starter so you have a infinite amount of yeast. You usually have to double the amount of rising time for the yeast to populate the dough. I still have my starter and use it.

Personally, my favorite for the type pizza is what has been referred to as the 3S Pizza at some places near me. Sweet, Spicy, & Salty.. It's a pan crust (With garlic butter on it) with a honey BBQ sauce. Uses a provolone based cheese blend for the cheese. For the toppings, it's Pineapple, Bacon, Jalapeno, and Red Onion (Often with the added possibility of adding chicken to it). The bacon is crumbled and crispy, working better with the pizza than ham because most places use larger pieces of Ham which doesn't work as well for a pizza topping.
@@noob19087 The thing is most people don't consider that logic. You'll find tons of people much more willing to eat toppings like onions, banana peppers, or bell peppers on pizza when those can be fairly sweet when caramelised. For many it's just irrational hatred.
The best pineapple pizza experience is "Hawaiian pizza", though I think that's just an expression. It comes with a Polynesian sauce instead of the usual tomato based.

The best meal I ever had featured a flatbread starter topped with fresh, warm ricotta, prosciutto, quince paste and fresh sage. Miraculous. I have always wanted to replicate the recipe but couldn't find a good flatbread that looked like what I had eaten all those years ago at "L'Opera" in Long Beach, CA. I think this dough and technique are what I have been searching for. Thank you, Chef!!
When choosing a pineapple, I look for a ripening lower end, with golden yellow starting to show through. I also smell the cut end for sweetness. When I bring it how I let it ripen fully on the counter for a few days on its side is it doesn’t bruise and when it’s mostly golden yellow, it’s super sweet! More sweet at the bottom always, it’s ok to ad sugar or honey :)

My MOM always put pineapple and cloves on the ham before going into the oven a piece ham and pineapple and stuffing or biscut i still make it today so so goooooood !!!!!!!!!!!!!!!!
I made this today except not on a bbq. Used my stove. Came out really good! Is a keeper. I do not think would add anything to it. Very clean tasting and refreshing. Next time we start our bbq, maybe try and see if the charcoal adds much. Did not want to start the coals up for just this, though.
The tough core that is usually thrown out is usually the best part of the pineapple, especially in the inner most part. Try eating it with a sprinkle of black salt and slices of a medium hot chilli pepper.

I'm fine with this, the issue has always been the interaction of pineapple and cheese for me. I LOVE grilled pineapple and pork, putting it on flatbread is genius!
I think the key is thin slices. When you get ananas pizzas usually, even good pizzerias, just throw on huge chunks of it making a soggy mess and removing any other flavours. Ive noticed a similar thing with avocados and sandwich bars, where they think the ratio of bread to avocado should be 1:1

Chef John, this combo is hardly new. It's old school and very delicious to put canned pineapple slices on the outside of a ham before it goes into the oven to bake. Whole cloves are also used. You can keep the flatbread. I'll take fresh biscuits and butter with the ham and pineapple.

I read an article in which someone described their favorite pizza pepperoni, mushrooms, pineapple with white sauce. I'm a huge fan of Hawaiian pizza and white sauce on pizza and mushrooms, but pineapple with white sauce and mushrooms is blasphemy. Pick a dang team.
Pineapple pizza is fine if it doesn't have tomato sauce. My favorite is a fusion of al pastor tacos, pulled pork, and pizza. Braise a pork butt in pineapple, beer, dried chilies, and garlic. Then remove and pull the pork and blend the braising liquid and drippings into a sauce. Use oaxaca cheese instead of mozzarella. The pork gets crispy edges when the pizza bakes. I tend to drizzle on some hot sauce.
This was great, but we used white nectarines instead of the pineapple because I didn't want to have a bunch of leftover pineapple. Now I've got an easy recipe for flatbread!

I just made this. Yum! After I grilled the flat bread, I spread pesto on them and then added the rest. I'll be making this again.
