I peel beets and potatoes and cut into large bitesized chunks. Add chunks of onion and any other root vegetable you want. Carrots and sweet potatoes or winter squash are great also. Drizzle oil and any garlic herb type of seasoning, or seasoning of your choice. Mix all and roast on a sheet pan or a large baking dish at 400 degrees for maybe 40 to 45 minutes. Makes a great side dish to meat or chicken.
You should make a combo of pickled beets and hard boiled pickled eggs. The eggs turn pink from the beets! I love having pickled eggs in my refrigerator!
I don’t know if you will like this but I find it so delicious and even crave it sometimes: 1 beet shredded 1 apple shredded Juice of 1/2 lemon That is it!!! It is such a delicious salad and keeps well in the refrigerator. Sometimes I will add one orange, peeled and diced.
This particular produce box seemed a little pricey to me. But then you didn’t have to drive all over town searching for organic produce, so it could be a bargain, depending on your circumstance. I canned beets last summer. I didn't have to pressure can them because they were put in a vinegar base. Really delicious. I take the leaves of the celery, julienne them and stick them in my chicken soup.
I have 4 beet plants growing, first time I’ve done that. I want to dehydrate them to make a red velvet cake instead of using red dye. Also for a healthy smoothie. 🙂

Produce box was pricey even for organic. I used Rumiano butter for years until it became so popular and I felt the quality came down as the price increased. I use the Mother's brand now and actually prefer it. Don't worry about your cheese . If it's unopened it's good in the fridge for months. Be safe in your travels.🙏

We make ABC salad with our beets. Grate, all raw, an apple, a beet and a carrot, eat as is or squeeze the juice of one orange over it and mix.
