- Wedge Fries are very easy to make, and are a great accompaniment with burgers, as well as so many other dishes. The wood oven is a great environment to cook potatoes this way. All the heat, that’s working together inside the oven, will bake them to a lovely crispy outside, with a tender fluffy center
4 russet potatoes, scrubbed clean
Olive oil
Chopped rosemary
Salt and pepper
(You can use other flavourings like garlic powder or paprika)

The real problem that I see here is that by the time you get to enjoy those potatoes, your buns are dried out, your burger is cold and you're' too drunk to care from the wine. So for the non drinkers, this might not work out if you wanna have this as a single meal. But if you like eating in courses, this could be something to try.

About how long did that take to finish in oven? Have you ever par baked the wedge fries so that you could crank these out quicker for a larger crowd?
They took about 25 minutes, depending on the heat of the oven. Parboiling is definitely an option. You could rough up the edges to make the exterior extra crispy.
Great videos as always. I count seven of the last twelve episodes about potatoes. Not a bad thing, since they do really well in the WFO, but it seems that this UA-camr really likes potatoes 😀

What about the wine you're drinking? It must get quite warm near the oven opening.
I only put it infant of the oven for the final shot, but during cooking to the side where there really isn't any heat

Every episode you inspire me to build my own wood fired oven. Then reality kicks in and I just have too many other projects in the fire that needs completing before starting a new one. One of the down sides of being a DIY person. Keep up the great videos and someday I will reduce my to do list to the point I can build mine. :)
I'm building my third one now, the first one I built at my parent's house, then my own, now my sister's. I still enjoy it, and every time the oven gets to be better. The amount of work involved is massive, however. Don't underestimate it, and don't cut corners. You can never have too much insulation, for instance.

How do you control the oven temperature?
A lot can depend on the construction of your oven, and in particularly how well it retains heat. Decide on the temperature you want, and heat it to that. Then maintain the temperature with a smaller fire, or increase it with a larger fire. The more you use your oven the greater your understanding of how it performs, and what it’s capable of, and your instincts will become more in tune with it when you’re cooking.

Perhaps you will want to make a video on how to cook a large boule/pagnotta without the use of a Dutch oven or a cloche in the wood fired oven. Also , withouth the crust becoming chewingproof/bulletproof.🙏

I did blow the oven temperature for the buns so I did them in the kitchen oven. Everything else went into the wood fired oven.

I have been cooking potatoes in my oven for several years but I par boil them. Going to try this method for Sunday lunch. Thank you.
Par boil works too. Takes a little longer but will give you a nice crispy outside.
I can't wait to get my close friends and family around and do these three dishes in my wood fired oven.

I wonder what temp your oven runs at? In a portable pizza oven running at 900f my potatoes are far more charred, for better or worst
That's WAY too hot for this dish.
About 600F in the center of the oven floor. But I use the variable temperature between the fire and the cooler temperature towards the oven opening if I feel they're getting too much heat.
