Nicely done! We do a slight variation here using a burger press, and adding a cup of spices to the meat to the taste of the individual (I like smoked paprika, black pepper, cumin, chili flakes and salt) and that becomes part of the meat itself. A Tuscan grill is used rather than a baking pan, with some hot embers raked forward and another piece of wood or two freshly burning for increased direct heat. Gotta say man, your videos consistently hit it out of the park. Hopefully we'll see more of them through the summer!

I don't think that was ever a quality I was looking for in my burger patty though! :) We'll add in grated cheese, or if I'm feeling experimental... grated pickled carrots to the patty. These elements impart flavour and texture, but they don't cook the same as the meat and in the end I suppose makes it feel less dense.

I understood it when I tried a freshly hand-formed grilled burger. It also helps when the ground meat includes brisket/shortribs. Very meaty. Preformed/restaurant burgers lack that taste hence you may want to enhance the taste by adding other ingredients. Definitely, other cultures/cuisines may influence what you want in the burger. So I’ve had my WFO for about 2 years now, however in all that time I have only cooked pizza. This burger with the rolls and wedges series inspired me to step outside my comfort zone. I was nervous about the rolls but the turned out beautiful, the burger was great, and the wedges we amazing. Thank you Clive for putting out these videos, they are great quality, entertaining, and they got mr cooking more than just pizza in my oven.

As burger lover IMHO something so beauiful as wood oven burger deserves more care. I would remove ketchup, and change it to proper burger sauce (in my usual burgers its mix of ketchup, mayo, mustard, worchester sauce, little bit of sugar, lemon juice, salt and pepper, maybe little bit of chives). I'm not a believer in the fuel you use adds flavour to the food the way that smoking food might. When the temperature reaches above 700F/370C, any moisture in the wood that would impart any flavour evaporates in the heat. I’ve tried different woods in the oven and to be honest I can’t tell the difference when it comes to flavoring the food.

@Clive A video idea for you. Like you, we enjoy our wood oven and cook almost everything in it. A video that would be fun to watch is one where the garlic confit, appetizer, or breads, entrées, side dish veggie and even dessert is cooked in the oven for a party of 6-8 people.

Try forming a burger by hand instead of a press. It makes an airy/juicier burger. Ditto on the Tuscan grill!
