Your food is exquisite, but almost more impressive are you plating skills. That isn't something you learn in a book, that takes a lot of time, imagination, and incredible skill. Having said that, this is my first year with my wood fired oven and I have only had pizza parties (similar to yours) so far. I really want to branch out with some of your other items you have shown. As always, thanks so much for putting these together, many appreciate it.

Your videos are the only ones that give me a guttural response when I see a new one. You inspired me to finally build my oven. I built an entire Tuscan outdoor eating area with a huge basil leaf metal pergola (I do metal fabrication and welding), a live edge wood slab communal table, brick oven, etc. I really appreciate your efforts with these videos.

You know I have always said that all too often chef's cooking food on TV just make things too complicated and too busy, so for me what makes Clive's dishes work and what makes his videos so watchable is that he takes just a few quality ingredients does as little as possible with them and added to that a calm presentation produces food you would happily pay good money for. I am sure much practice has been put in to every part of the dish and the presentation to ensure everything is perfect, also the length of the films are just long enough to keep you interested. Well done Clive another great video. Already looking forward to the next episode.

Magnificent Clive. About to close the dome of my oven tomorrow so, I'm moving (maybe too quickly) into the anticipatory cooking tutelage of the whole project! Thank you for providing so many dishes to not only strive for - but offer jump points for our own creativity. Your adobe/tile design is exquisite and fits well with our garden surroundings. Up here in Canada - I'm going a bit more rustic - but I'm intrigued by your landing hearth - you have two tiles it seems: workspace and aesthetic perhaps? You have me intrigued from my original plan and will move away from the porous options I was originally thinking to more function ... but I do, still like rustic form. Should I email you to inquire after your tile choices? Welcoming any insight indeed. Thank you for the lovely videos - please keep them coming ... at your pace. Barry

Another excellent video Clive, thank you so much for posting. The term "hard" cider flummoxed me a tad, however a swift spot of googling put me on the right track. This recipe would be something I've got to try when I eventually get my build done. Presumably it isn't too much extra hassle to throw in a few more chops into the pan when entertaining a few guests. I guess the trick is to have plenty of various pans at one's disposal. Looks like I've got a bunch of purchasing ahead....
