Ep 38: Roasted Chili Sauce from the Wood Fired Oven

- This is my favourite chili sauce. But this episode is also to show you that the wood oven is a great place to roast peppers for whatever sauce or dish you want to make. Roasting the peppers softens the texture, and adds a lovely smokiness and sweetness to their flavour.
I think this sauce makes a great addition to vegetables, roasted meats, and for use as a dip.
The ingredients for my sauce are:
1 red bell pepper
4 Fresno chilis
If you want to go hotter you can add a serrano pepper, Thai chili, or habanero
55g hazelnuts
6 cloves of garlic and enough extra virgin olive oil to cover them
Some sherry vinegar
1 tbsp of paprika
Zest from 1 orange
The wine is a 2020 Presqu’ile Chardonnay from Santa Barbara County

Why dont you build your own oven? If you have a backyard you should. I built one not to difficult. You can even build a portable one and take it outdoors.

Have you heard of Irish potato farls? i add cheese to my dough, but they make good pizzas. Also, you can serve them in rounds or cut in triangles

Yes, smoked paprika. Almonds would work fine. I sometimes use marcona almonds. But any kind of nut will work.

What kind of camera setup are you utilizing? It seems like perhaps 3 cameras all at once with different views (and truly fantastic editing to compose them together).
Yes, I'm using the Sony A7 IV, and various lenses. And editing in Adobe Premiere, but thinking of switching to DaVinci. Thanks for commenting.

Thanks so much. The Octopus utensil holder is still around, but it's very delicate so I try not to use it much. My daughter made it, and she's making another holder that will be more sturdy.

Yes, around 500. Much higher than that is too much for the peppers I've found. And then it's easy to raise the temperature if needed for the next dish.
I have a friend who has a very successful business. Works tremendously hard. He spends his nights cooking 3-4 hour meals outdoors to relax with wine. Seeing you at 2:50 reminded me of him.

The floor of the oven is made from refractory concrete, as is the dome. Below the floor is ceramic fiber board.
Tried it and it is amazing sauce. The only thing I would add is a bit of salt to give it more flavour. 🎉

This looks fabulous. My wife is allergic to hazelnuts. Do you have any suggestions for a good substitute? Maybe almond or Brazil nuts?
Almonds, Marcona Almonds, Brazil nuts would all be fine. But pretty much any nut will work. Or if someone has a nut allergy you could use toasted breadcrumbs

Nice sauce and as you mentioned perfect texture. Reminds me of the Romesco sauce from Spain. The Romesco sauce is undoubtedly one of the most well-known elements of Catalan cuisine in the world. Romesco sauce is a cold sauce made with tomatoes, red peppers mixed with rehydrated dry Ñoras also called "Pimiento choricero", almonds &hazelnuts, garlic, and other ingredients. It originates from the city of Tarragona, in the south of Catalonia. It is definitively associated with "calçots," which are young onions grilled on a barbecue or griddle and enjoyed with this sauce.
Thank for this information. Yes, the foundation of this sauce is based on Romesco, but essentially without the tomatoes. More to come.
