The thing with 3rd, 4th and 5th tier Farms for your city is that they have the same production rate as a 2nd tier Farm. They just store more over time. So if you're inactive over longer periods of time (like when you're going to sleep), then upgrading 'em pays off.
They come, at random from playing the tiles. Also from beating the bloon beacon (every time you beat it), certain levels after beating the bloon boss, and of course, you can buy them with real money, if you so desire. Beacon and Boss are only available at certain times though. Mostly, just play and you'll get them.
That I really can't answer. I'm not sure. I'm relatively high in the levels, so it's definitely unlocked for me. You should see the icon on the left side of the screen just like it shows on Chris' video.

Upgrade the engineer, balloon trap is overpowered late game. You literally get more then 10000 each round if you combo it with a balloon chipper.
You should upgrade Bloon Sabotage with your wild cards.
I was also a teeny tiny guy and the first coaster I went on was wooden and ONLY had a lap-bar. Needless to say I was holding on for dear life :P
