In general, I keep my kitchen minimal and clean (I like to hide things in the pantry and cabinets), but with the kids around, things won't stay the same for a long time. ;)

That looks to be a delicious breakfast or lunch soup. A kombu dashi for breakfast, bonito for lunch. Perhaps some tofu, and bean sprouts for a bit of vitamin and protein kick as well?

I used dried shiitake mushrooms, it's as nice as fresh ones. I didn't have eggs (xD sorry) I put cherry tomatoes instead ! I also add a little fresh lemon. (not needed if you add tomato) It's a nice recipe, perfect for cold times. ^^ Thank you

気に入ってもらえるとうれしいです。You said correctly. :) If you're not vegan/vegetarian, I would use kombu and katsuobushi (Awase Dashi), and skip shiitake mushrooms, which tend to have stronger flavor (may overpower). Hi Regina! If you want to make this dish "Japanese", the only way to make it taste authentic is dashi. If it's chicken broth... I'd say it's more Chinese style? If you're not particular, then you can use other broth. If you're allergic to fish/seafood, I recommend using Kombu Dashi, which is no fish/seafood. 母と一緒にこの料理をつくりました。 But it seems to be for 4 servings. For the dashi, 3 cups is 700ml right? We had more mushrooms (4~5) and 1 big oignon instead of scallion and perhaps too much meat. Maybe this made the plate too big :p but in the case of correct quantities there would be more soup (dashi broth), is it the expected plate? I used 2 tsp dashi powder + 700ml is it a correct equivalent of your dashi pocket? Thanks a lot for your recipe :)

They look amazing and I'd love one of each, but I'm wondering if you need a gas-stove to use them? Where I live we primarily use electrical ovens and am not entirely sure if they are suited for that.
I love kamadosan (and use it all the time as kids prefer rice made in kamadosan than rice cooker). Unfortunately, it requires gas stove. For regular donabe, we usually bring the pot to the table to cook, so either way, I recommend a portable gas propane cooktop like this (amzn.to/2lV73un) with butane fuel (amzn.to/2mc7mDy). We use it all the time to make hot pot, or reheat this Zosui at the table etc. And you can make rice in Kamadosan with this, too. Hope this helps!

We learned to make this with leftover nabemono broth. So great to make the next day for a winter morning breakfast.
That's right! Our family is usually go for udon (as we eat nabe with rice) to end the meal. No waste of delicious hot pot broth.
We went to a 'nabe' restaurant in Hawaii.
At the end of the meal, the wait staff added more dashi and prepared Zosui for us.
Yes, that's right! We always end the nabe with rice (Zosui) or noodles. :)

At 3:04 you rinse the cooked rice. Is that just to break up the clumps? Or does it remove excess starch?
Remove excess starch. For Zosui, we rinse rice. For (similar) Ojiya, we don't rinse rice. I mentioned in the blog post. :)
