  • Tonjiru is a savory miso soup with pork and root vegetables. Packed with an excellent source of vitamins, it’s absolutely nourishing and soul-fulfilling!

    INGREDIENTS (Please check the website for detailed info)
    * For Soup Ingredients
    10 oz sliced pork belly (272 g; Use at least ½ lb or 227 g of pork belly)
    4 oz gobo (burdock root) (½ length, 100 g)
    8 oz Taro (Satoimo) (3 pieces, 227 g)
    1 onion (6 oz, 170 g)
    9 oz daikon radish (2 inches, 247 g)
    4 oz carrot (4 inches, 123 g)
    ½ block konnyaku (konjac) (4.5 oz, 128 g)
    ¼ tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt) (for cleaning Konnyaku)
    1 Negi (long green onion)
    1 piece aburaage (deep-fried tofu pouch)
    1 knob ginger (Need 1 tsp grated)
    7 oz medium-firm tofu (½ of one package; cut into ½" cubes)
    * For Making Soup
    1 Tbsp sesame oil (roasted)
    6 cups dashi (click to learn more about this soup stock) (1440 ml)
    6 Tbsp miso (Each miso brands/types taste differently, so please adjust the amount according to your miso)
    * For Garnish
    1 green onion/scallion
    Shichimi Togarashi (Japanese seven spice) (If you like to make it a bit spicy)

    I made this two weeks ago for my brother and his family. It is so good. We all loved it! I made enough to feed a small army and bring some in the road with me to enjoy during my travels. Even as a “left over” it was amazing. 😊

    I know this is an older video, but I wanted to comment that I’ve been making tonjiru from this recipe for some time because it’s so easy, delicious, and has everything I need in a comfort food. I don’t eat pork belly, so I just skip it. No one has complained about that in my house, but there are a few that don’t like konjac because of the texture. But they still love this dish.

    This is a very refined version of tonjiru. Our family eats it as a main course, using bite sized rib tips or baby back ribs instead and we add kombu. Thank you for the recipe

    I love the way you add the miso with the strainer - that is such a smart technique to make sure there are no lumps! Certainly going to use that in the future. This is one of the reasons videos can be so valuable, to show techniques and details that might not be clear otherwise. I appreciate getting to see how you prep the vegetables as well.     I love this recipe, but it's so hard to find burdock root in my country, especially with a lot of markets closed due to the pandemic 😞 I've also never been able to find Konyaku, but I'm not really sure what I'm looking for/where it would be in the store...lastly, I can only find purple taro, which seems to break down in the soup. Even with these changes, it still tastes great, and I've been making lots of tonjiru recently because it's winter here!!

      konnyaku can usually be found in plastic bags, they can have a purpleish tint too sometimes, or they come in noodle form

    Oishiiso, tabetai! I'm going to try and make it. When I'm in Japan, I usually have this after izakaya hopping. Also in some cases, they have "Motsu" inside along with belly pork. Arigato for sharing!

    This is my absolute favourite type of miso soup! It's so savoury and hearty, and I love the texture that all the root vegetables give. Do you think zucchini be good in this recipe?

    I've watched that series and I was so surprised during the intro because the subtitles just referred to the dish as "Miso Soup" and there were so many more ingredients in the soup than I had usually seen used in miso soup!

      In Japan, ingredients for miso soup change daily at home. Not just tofu and wakame like how it's served outside of Japan. We change it everyday based on the main dish etc. :)
