Gobinda bog is a variety of aromatic rice, which is smaller that Kaima or Jeerakasala. Another aromatic smaller cultivar called 'Kaasha' from North East, especially in Asom and Tripura (comes in three variant, red, white and black) are heavily scented and tastier than Gobinda bog. Unfortunately these are only available only with local farmers there
These is called dum that heat is created with aluminum which is old hyd style they don't Wana use term Dum cuz that will be very clear that the dish has been copied from hyderabad... and everyone knw how biriyani of hyd tastes

This rice is called GOBINDOBHOG here in Bengal. Usually we don't cook biriyani with this rice . But in Bangladesh,they do cook biriyani with GOBINDOBHOG... ❤
We do not use gobindovog, our rice variants are called chinigura and kalijeera which are small grained aromatic rice which are especially used for cooking biriyani, polao and firni or any kind of gourmet party dishes.

Here in BengalThis rice is called Gobindovog (Vog/Prasad for Lord Govinda/Krishna), as in West Bengal, Assam and Bangladesh this rice is used for makin Payes(one type of Kheer). This rice is better than Basmati in every aspect. In Kerala and Tamilnadu this rice is also used to make Biriyani,, Pulao.
In fact, only in northern districts of Kerala (Malabar Region), small sized rice is used for Biriyani. In south Kerala, Basmati like rice variants are used.
