My mother use to make fruitcake a few weeks before Christmas and she would take cheese cloth and soak it in sherry and put it in the middle of her fruitcake wrap it and put it in a tin and put it in a dark place and every few days she would resoak the cloth. She said that makes your cake mellow. It was really good. She cooked hers in a tube pan

I just made my first fruitcake today for Christmas tomorrow! It turned out beautiful. I used my grandmother's recipe that you eat the next day.. it doesn't have alcohol, but grape juice in the batter in place of milk. I'm so excited it turned out so well. I put an orange glaze and maraschino cherries on top for decoration.

Made this for Christmas 2021. It had about a six week stint on the counter before Christmas with a couple of basting of Grand Marnier in the first week. At Christmas, it was pretty boozy and a bit muddled - good, but not great. I took the half that wasn't consumed, wrapped it and put it in the freezer. I took it out of the freezer three days ago to thaw out and warm up for Christmas 2022. I unwrapped it and had a slice last night. It is absolutely spectacular. It is sweet, the fruit shines through and there is great depth of flavor. Doesn't taste boozy anymore. It appears from my (one) experience, that aging fruitcakes is a legitimate thing. It was in the freezer and it still worked. Now it makes me wonder for how long it might continue to improve.
This cake looks delicious! In Venezuela we have a similar cake called Torta Negra or Black cake. We bake it with macerated fruits in alcohol, nuts, cocoa powder and melted chocolate! Usually the fruits are macerated months in advance, preferible after Christmas (when you can buy the fruit on sale and have some left over booze hehehe). It is very traditional and every mom has her recipe! As you said is a case of love it or hate it! Thank you for sharing!
I've made this cake four times now, family and friends love it. My mum is from the Caribbean Islands and she used to put all the fruits in a huge glass sweet jar putting rum in one, sherry in another etc. I now do the same thing and always have a jar on hand when I need one for a special occasion. Being English one of our traits is we believe we know all there is to know about baking!! I have learnt so much from Joy. The tip about mixing flour through the fruit is something I will definitely try both when I make this cake and the next time I make a Cherry Cake, maybe then I wont have a cake where all the cherries sink to the bottom. In our house its know as ‘the acne cake’!! 💐💐

Enjoyed your demonstration very much. You are such a tidy cook it;s a pleasure to watch. I add some black treacle which gives, it a slightly bitter taste. I like the idea of mixing the dried fruit with flour, then mixing it with the creamed mixture with my hands. You get a really good mix doing that, and the fruit is so evenly spread. Just popped my fruitcake in the oven! I love how simple your recipe is. However, my batter was slightly more wet because I soaked my dried fruits in hot water beforehand (and drained them as much as I could), so I am hoping it turns out okay. I'm going to try to bake it for a little longer. I also had to split my batter into two cake tins because there was just SO MUCH. Glad I can make 2 whole cakes out of this though!

As I've told you, I've been making this fantastic recipe for as long as I can remember and it's always a hit with our family in Germany and France. I just made this, will be bathing it in liquor the next 10 days in prep for Christmas. I am very optimistic , as I tasted everything as it went into to the cake. I used roasted almonds for my "ground almond" part, wow what a flavor source, used a blend of whiskey, brandy, and orange liquor for the first bath. Growing up in the 80s, fruitcake was offensive to me because they always smelled and tasted like rubbing alcohol. But now, I cannot wait to taste and share this. Thank you so much for your videos.

I have used your recipe but used a vegan spread styled butter and a plain soya yogurt and my egg replacer but the rest as in your recipe then a second cake using your exact recipe as a gift both worked very well indeed thanks it worked for my home cake as I am vegan now 31 year and 40 years before a Lacto vegetarian soon to be 72 years in all cheers once again

After a month of feeding our fruit cake with brandy we finally cut into it last night. This recipe is pretty amazing! The anticipation was killing us. In the last week I covered the cake with a layer of marzipan and a layer of fondant, which is the English way. Had to make 3 batches this year to supply all my family requests! Its a great fruitcake. Right now al are ripening in the fridge with some grand marnier. If you’ve never made fruitcake before, try this. I was a fruitcake virgin till I tried this. Its easy and delicious.
Being English one of our traits is we believe we know all there is to know about baking!! I have learnt so much from Joy. The tip about mixing flour through the fruit is something I will definitely try both when I make this cake and the next time I make a Cherry Cake, maybe then I wont have a cake where all the cherries sink to the bottom. In our house its know as ‘the acne cake’!! 💐💐

Tried this recipe for the first time. Made it in November and we just sliced it last night by the Christmas tree. Absolutely delicious. I must finally be an adult now......I like fruitcake‼️ Merry Christmas to all and may we have a much better 2021.

Enjoyed your demonstration very much. You are such a tidy cook it;s a pleasure to watch. I add some black treacle which gives, it a slightly bitter taste. I like the idea of mixing the dried fruit with flour, then mixing it with the creamed mixture with my hands. You get a really good mix doing that, and the fruit is so evenly spread. Thank you for your video.

Just popped my fruitcake in the oven! I love how simple your recipe is. However, my batter was slightly more wet because I soaked my dried fruits in hot water beforehand (and drained them as much as I could), so I am hoping it turns out okay. I'm going to try to bake it for a little longer. I also had to split my batter into two cake tins because there was just SO MUCH. Glad I can make 2 whole cakes out of this though!

As I've told you, I've been making this fantastic recipe for as long as I can remember and it's always a hit with our family in Germany and France. I use Bourbon when I make fruitcake and it works great. I also soak my fruit in the alcohol at least overnight.

I just made this, will be bathing it in liquor the next 10 days in prep for Christmas. I am very optimistic , as I tasted everything as it went into to the cake. I used roasted almonds for my "ground almond" part, wow what a flavor source, used a blend of whiskey, brandy, and orange liquor for the first bath. Growing up in the 80s, fruitcake was offensive to me because they always smelled and tasted like rubbing alcohol. But now, I cannot wait to taste and share this. Thank you so much for your videos.

In many place they soak the fruits in alcohol for a year at room temp. I do it for a month.
I have used your recipe but used a vegan spread styled butter and a plain soya yogurt and my egg replacer but the rest as in your recipe then a second cake using your exact recipe as a gift both worked very well indeed thanks it worked for my home cake as I am vegan now 31 year and 40 years before a Lacto vegetarian soon to be 72 years in all cheers once again

After a month of feeding our fruit cake with brandy we finally cut into it last night. This recipe is pretty amazing! The anticipation was killing us. In the last week I covered the cake with a layer of marzipan and a layer of fondant, which is the English way. It's definitely a very "grown up" flavor-less sweet and more complex than your usual birthday cake. Thank you for this recipe, Stephanie!
