    Hi Stephanie~
    I'm a Spanish living in South Korea and I have to say I totally love your videos. When I arrived to Korea 3 years ago I was a bit depressed because here it's not common to have nor use the oven, so usually people cannot enjoy the taste and smell of a homemade cake (Of course it's possible to find places where they sell cakes but usually are franchises and the flavor it's not the same). I knew about you through a Spanish blogger and I'm really thankful to her. Few months ago I finally bought an oven and with your recipies, your explanations and your videos I'm feeling again the joy and pleasure of baking. My future husband is so delighted~ Thank you once more for sharing with us your knowledge!!

    stephanie, you just saved me with this delicious carrot cake. somebody wanted 16 carrots cupcakes the next day and the day was late.. the first recipe failed to rise and we tried your recipe. the cakes came out just nice and delicious and the goodness came out nicely after the next day. felt like i have won the cupcake war!! so thank you so very much

    This was the first cake i've ever baked on my own, for my boyfriend's birthday 5 years ago. I made it again for a friend yesterday and oh my! It was the best! Everybody loved it! I think it is officially my favorite

    I just baked this carrot cake and I must say it's the best carrot cake that I have ever tasted and it came out very light and moist. 😋 So far the family seems to be loving it. Whenever I need to bake anything you're the one that I always come back to.

    Hi Stephanie, I cannot thank you enough for this great recipe. I baked the cake on Sunday and my boyfriend absolutely loved it and said it was the best cake he's ever tasted and he is very fussy about carrot cakes.

    I made this cake and I must say it has the right balance of moisture, texture is great. I didn't have the time to grate my carrot with the grater so I used my juicer which was fast enough for me then I just combine the trash and the juice of the carrot in the cake. I also use brown sugar instead and I added a few drops of almond essence. my little tweak didn't change the cake at all it came out SUPERRRBB!!!

    This is heavenly and my family rave about it! I used an Angel Food Cake Tin and let a thick cheesecake icing drip down the sides. (the family were scraping the icing off to eat it ). Thank you again Stephanie. I'm a 63yo female from Australia. You have resurrected my "cooking mojo". This lime pie turned out perfectly just as all of your other recipes that I've worked my way through over the last few weeks. I've made the Carrot Cake, the Date and Walnut Bread, the Banana Bread and I now have the pastry and chicken ready to complete your Chicken Hot Pie that I changed a little to a pie (I reduced the stock to 1.5 cups instead of 2.5 cups) and the Lemon Poppy Seed Cake. My family raved about it. I can't resist eating the Lime Pie -it's perfect. It's autumn here and I'm enjoying making your recipes so much because they all "turn out" exactly as you instruct. So many more that I want to cook. I think that I'm addicted to your site. All the best to you! Maureen :)

    I made this and it came out wonderful, thank you! I must say, though, the cake tasted much better after it was left overnight in the fridge. It's like a fine wine, tastes better and better the longer you leave it!

    I made this recipe, the oatmeal cookies, m&m's cookies and chocolat meringue cookies. All these recipes are just deliciousss and every time I bake them, people always give compliments and it makes me feel bad because they are not mine but thanks to you I'm a baking pro! You perfectly convert them to European measurement since I'm from the Netherlands ;) Thanks again and I can't wait to try something else :)

    I just baked this for my mother's birthday and it turned out fantastic.
    I decided to add the half cup of pineapple, as I had done so in the past in a previous recipe and enjoyed the moistness of the cake. However, my recommendation is to leave it out if making a stacked cake, it becomes a bit too moist in my opinion. Perfect for a single layer cake. I also added half a tsp nutmeg for that extra kick.

    I made it today adding a bit of my touch.I mixed the glassing with whipped cream and also added some nutmeg and clove to the cake.Great recipe,the aromas where all over the house.Thank you Mrs Jaworski!

    This cake was amazing. Made it yesturday for my boyfriends family because I just found out his dad loves carrot cake. He is very picky and a big critic so I was very nervous to make it. Regardless of my feelings I decided to put the cake to the test and it PASSED! Surprisingly he had nothing negative to say about it. I was surprised and tasted it for myself. I'm not a big carrot cake person but man was this good! Give it a try. It won't dissapoint. :)

    Made this recipe a few days ago and it's perfect! My brother dislikes carrot cake and I finally got him to try a piece before it was all gone. He ended up really liking it saying it was perfect! Love that it's not too sweet and sooo easy to make. Thank you for this recipe! Will be making this again in the future.

    The whole family is a big fan of this recipe, i made it more than 10 times, i use a bit less sugar then she is indicating, and it still comes out
    yummy. ( 200g brown sugar for the cake and 70g confectioner's sugar for frosting. )

    Stephanie, I can't thank you enough for using the metric system. I'm sure you've made a lot of Europeans very happy. I have one question for you: a few cookbooks recommend using brown sugar, which was a bit of a hassle to find here in Italy. Some books even tell you how to mix regular sugar with molasses if you can't find brown sugar. I eventually managed to find it and ended up using it. So do you think it really does make that much of a difference to use brown sugar instead of regular sugar? Would the taste be very different or is it just a matter of the dough being darker? Thanks!

      I think it would taste nice with a mix of granulated/white sugar and brown sugar since I saw many other recipes doing this.

    Dear Stephanie, thanks a lot. I have tried this recipe a few times and all worked great. Once I replaced carrots with grated pumpkin and added grated orange skin for flavor - it was the perfect cake.

    Yes, you could use cashew nuts. I've never tried using melted butter instead of the oil, but I think it should work.

    made this cake for my mum's bday and everyone absolutely loved it. its such a nice cake. i am going to make it again for someone's bday, but i was wondering if it would be ok to use a heart tin instead of a round tin? or should i just play it safe with a round tin??????

      I'm sure a heart tin would work fine! What a lovely idea. Can always use the toothpick test after the suggested baking time, to check for doneness.

    hi Stephany..i just made your cake.I didnt use normal flour instead i used self raising flour(without adding bs,bp,salt&cinnamon)..it was sooo moist&yummmyy..hubby&my two daughters have eaten half already 😀 thanks to you..love your recipes 👌🏽👌🏽

    Hi Stephanie, made this wonderful carrot cake for my son's birthday few days ago, it was so amazing and all my guests love it..the frosting was great accept my icing sugar was not dissolves well and can tastes the slightly grains of the icing sugar. thank you so much again for yr recipes.

    I always look for other recipes for carrot cake when I feel like making one. Then I always end up making your recipe all the time.

      I always do it in a loaf pan same recipe.

    I made this a few weeks ago...amazing...so happy with result....making again today as a welcome for my summer interns tommorrow!

      Just a little. I up the content. Recipe calls for 2.5 cups. I used 3 first time and 3.5 with this one. will try 4 next time and I think it will be perfect. Really, one of the best cakes I've ever had - and I made it myself.
