      Honestly i can’t live a good life knowing others are hurting and I didn’t do even a little to help. Once my basic needs are covered, I try to give what I can.

    Great meal prepping this week Rebecca! I love that you are getting a produce box that will hopefully help you to get more veggies in. I have heard that celeriac makes a good mash, like mashed potatoes :)

    It is a celery root! I have never cooked one but I saw Kathy Hester - a vegan recipe developer on UA-cam and on tiktok, as well as other platforms- prepare one for cooking in a soup... I've seen the collard greens steamed and used as a wrap. They can also be used as you would kale. I like them chopped up, steamed, dressed with olive oil and lemon juice or vinegar.

    Espresso machines are intimidating as Hell, when you're new to them. I remember my first time, I was like, "I need an adult!" lol.
    Once you've used it a few times, it's easy. My only advice, going by what I saw, is that you might want to press harder when you tamp the espresso. Honestly, though, if your drinks are coming out fine, I wouldn't worry too much about it. I would try it and see if you notice a positive difference.
    By the way, I love the names you give to your meals.

    Pro at home espresso tip! When you are steaming milk, and it sounds like it's screeching, it needs to be airated/stretched (which means to bring the tip of the steam wand to the surface of the milk for a few seconds at a time to add extra air bubbles/volume) when it's properly airated, steaming milk should sound like quietly ripping paper haha. This method helps give it a creamier, silkier texture 🙏

    Apartment Heat hack: make dried orange slices in the oven. It’s an excuse to keep the oven on for a long time and they make great Christmas decor 🤣

    I use collard greens like I would spinach or kale. I chop it up into small pieces and add to soup, curries, tofu scrambles, etc. I’ll buy it fresh, chop it up, put it in a ziploc bag and freeze it. I then add it to dishes I’m cooking directly from the freezer.

    I like sweet potatoes a lot. I like to make a hash with sweet potatoes, quinoa, Impossible sausage (the one in the tube), and kale. You could throw the collard greens in there instead of the kale and sauté those. Little bit of vegan cheese on that goes a long way.❤

    I know you are not a fan of sweet potatoes. Broccolimum here on UA-cam and on Instagram has recipes for pudding and other sweet things made with sweet potatoes. Pretty yum!

    I've seen recipes for knafeh that recommend mild mozzarella--don't hit me!--and Lebanese people I know have used it at the height of the pandemic and said it's OK, in a pinch. Maybe a very gooey vegan mozz blended with some Silk heavy whipping cream? As for the seitan, I have a Ninja processor, and they suck for pureeing things like dense tofu. Haven't had any luck getting super smooth hummus, either. Enjoyed seeing your eats here, always varied and nutritious. Hope your life has gotten more ordered; they say order naturally follows chaos and I try to remember that. Thanks for posting : )

      Thank you for watching! Yeah, I usually have to use the small blender attachment to get the hummus smooth. It's a decent blender but I thought it would be better for the price tbh. I usually love ninja stuff. As for the knafe, I have a plan for trying to make it. I just haven't found the time yet!

    Rebecca, Add the Celery Root, to Potatoes. Like, Mashed Potatoes. Add the Celery Root (Peeled) & Potatoes to a Pot then Mash Together. I, would then add whatever Seasoning you prefer. I, make Mine with Onion, Garlic Powder & Lawery's Seasoning Salt. Blessings & Love to you ALL,
