Coming from someone who grew up loving tubs of cool whip and would even sneak some with a spoon, you won’t find anything more similar than the So Delicious CocoWhip! It comes in a tub just like cool whip and the texture is spot on. Another thing you can do with it is to keep the tub in the freezer and scoop it out and eat it like ice cream! 🤤

I know that they at least sell it in Canada and the USA not only in places like Whole Foods, but in smaller grocery stores now too. I’m surprised that they don’t carry it at the Whole Foods there. Here you can find it in the freezer section of grocery stores. We used to go to buffets all the time as a family and I definitely remember jello with cool whip!
Why don’t you just follow the instructions on the can? Also, normally with whipping cream, you add the sugar after you have beaten it to soft peaks then beat it longer to stiff peaks.

I gave this a try myself prior to seeing your video. My results weren't much different. It thickened a little but never formed any kinds of peaks. I did use Cream of Tartar. I so wished it would have worked.
I would love to see you trying the Butler Soy Curls (they are made from the entire soybean, so much healthier than any other stuff found on the market).

It looks like what you end up with using the chill, spoon, and whip method for regular full fat coconut milk that has a high percentage of coconut fat. As with some analogue products, maybe it's better to just make your own? TFP : )

Why is she sitting and anyone who has ever whipped cream with mixer knows,it spits out every where! To keep any whipped cream thick, it needs a stabilizer! There are many to choose from. NEVER put the can of coconut cream in the freezer! 🤦🏻♀️ And, you need to drain out the liquid. She didn't and poured it into the cream!

Adding like a teaspoon of Cream of Tartar usually helps in stiffer peaks

I tried this last night and it never formed. I even tried to keep the bowl cold while whipping...nothing.
