I love meringue and I'll have something new to make this weekend. Thank you for sharing because as a child I loved butterscotch candy and the flavor. This will be first time I make a butterscotch pie, wish me luck, lol. Take care & God bless!

Our palates really are so compatible given our ancestry, so it's not surprising that Brits love Southern food. And British food is so underrated! Why Yorkshire pudding didn't make it across the pond is a mystery rooted in evil. Toad in the hole is sooo good! Love from Blue Ridge, Georgia

Sometimes, if I want a cream pie to “sit-up” for a special occasion, I will soften an envelope of unflavored gelatin, then add to the hot mixture. When chilled, it will be nice and firm, without changing the flavor. LOVE Butterscotch pie! Your recipe has inspired me to make one. A story: I was babysitting a “grand cat,” and guests were coming for dinner. I’d baked a luscious lemon meringue pie, and it was a masterpiece… tall peaks of lightly browned merengue, and the made from scratch lemon filling perfect. I made a quick trip to pick up an item at the grocery store, and left the pie cooling on a rack. When I returned, Dylan the cat was up on the counter, licking his paws. He had licked off half the merengue…. We had ice cream for dessert.

My great granny, Elsie Lamberson, made the best butterscotch pie ever! She was legally blind for as long as I remember, but she could cook! Her rivels & gravy, butterscotch pie and grape jam (made from the grapes in her garden) are my favorite memories of family dinners in Montpelier, Ohio. We traveled to her house from Michigan every 6-8 weeks.

Pie turned out great and looked like it tasted delicious. Butterscotch pies were one of my favorite pies my mamaw made. The video brought back lots of memories. We live in eastern KY and my mamaw was just an old time country cook. When she cooked she cooked. Guess where she was one of the oldest of 16 kids I guess they had to cook big meals. But she would have her pie days and she would spend about all day just baking different pies for my papaw. I would come in from school and there be pies on the counter and table. She always told to learn to make pies cause one day I would marry a man who loves pies and I did marry one I try but I'm no where near a piemaker. Thank for sharing your recipe and I enjoy watching all your videos they always bring back wonderful memories of growing up.

When mom was missing home and recalling the depression times for a family of ten, she made butterscotch- just the custard/pudding part and we had it on crisp buttered toast - for breakfast! Yes. And it was the best cozy winter flavor, and my favorite flavor. Mom's best pie was tart lemon meringue. She made about 8 pies one year for a family reunion. Some loved them so much she made about four just for them to have an individual to take home! On the way we were hit in the car, a station wagon, and those pies were in the back with us and they went flying forwards! We had lemon meringue everywhere! No more pie, no more car, we were just blessed to all be okay! 6 of us in there and all the family showed up at the ER to see us covered in pies. What an unexpected day. Pies sure have memories! Yours looks so creamy and fresh. Yum. This pudding would be so good with just butter toast. Can't eat it ALL warm! Shucks. I've tried warming it later, you can't get that texture back...I make butterscotch coffee now, and it's really good! (Try that whipped tic tok dalgona with smucker butterscotch syrup-or a Tbsp butterscotch schnapp if you dare.)

Tipper, sounds just like my momma chasing down what she wanted to be her 'signature' pound cake recipe. She always wanted to have that perfect pound cake around for desserts, snaking on, or if company just happened to came by..... just like her grandma always had when momma would go visit after school as a kid.

Oh memories. My mom made only 2 pies, pecan and jello pudding pie. I don't think I've had one since I moved out in 92. I couldn't choose which flavor I liked best between the chocolate and lemon. Vanilla was the least. Butterscotch and pistachio was also good. Lol I think she made those because she didn't like sharing her pecan pie. She only made it once a year because of the cost of nuts. We never had merengue because she didn't like it. We had dream whip. Your pie looks beautiful!

Thanks Tipper. I love butterscotch pie and it's so easy to make. The hardest part for me is getting the crust right so I usually buy a frozen crust. My grandma taught me to beat the filling after it cooks. She used an egg beater. Boy those things take forever and wears you out by the time you're done when you're a little girl. Much Love ❤

The pie looked delicious along wit the meringue topping. To pass on a secret, most, if not all, professional photos of pies with a meringue topping are not egg whites. They use shaving foam to make it look like egg whites. You can snap the shaving cream anyway you want it and it holds up under the hot studio lights. So don't worry about how your topping looks.

When I make cream pies I add the eggs at the beginning, they warm up with the other ingredients and I’ve never had scrambled eggs by doing it this way, all of the women in the family that baked did the same thing. But, once after watching a cooking show, I did try and temper the eggs after the milk has warmed up, I did have scrambled eggs, so I went right back to how my Mom taught me and it’s never failed me. I love Butterscotch pie too, it’s one of my favorite, my other favorite is German Chocolate Cream pie which after much trial and error I simply added chopped pecans and coconut to my Mom’s chocolate cream pie recipe and walla…German Chocolate pie. I add about 3/4 cup each of pecans and coconut just a minute or so before the filling is thick enough to take off the heat, and I like meringue on all of my cream pies.

I learned how to make pies from my grand mother and have been making them for 50 years .The recipe was just like your Aunts. Well about 5 years ago I found a easier way and you dont have to temper your eggs. Mix all your dry ingredients together , put your milk in a cup ,beat your egg yolks with a fork and then mix it well with the milk ,then gradually pour the milk and egg mixture little by little into the dry ingredients as you turn on the burner . For 2 pies I use 6 egg yolks and 3 Tbs of flour and 3 of corn starch . They have turned out great every time .I was so happy not to have to temper eggs anymore. I to use a regular pan and whisk it constantly until thick .I then add vanilla and butter, iust let it sit till the butter melts ,stir it and pour it in the pie shells
I can't tell you how much easier it is from the old way.I was very suprised. Also I've always used pet evoperated milk. Any evoperatrd milk is fine but pet brand gives it a whole new elevated flavor. It thickens to the right consistency as it cools.

My Granny used to make one chocolate and one butterscotch on Sunday mornings so we could have them for Sunday dinner. I could never decide. Today, butterscotch is my hands down favorite. She used to tease us and say, "You don't wanna eat that ol' pie! It ain't no count anyways!". Then she would giggle. Oh, it was "COUNT" alright. What I wouldn't do to hear her sweet Eastern Kentucky voice again.

That looks delicious! Butterscotch (and chocolate pie) are faves of mine. Tipper, have you ever made an Indiana Sugar Cream Pie? This is a delicious and easy pie to make. Give it a try, you won't be disappointed. I like to serve mine with whipped cream and fresh berries.
    Indiana Sugar Cream Pie
    1 9” pre-baked pie shell
    1 cup sugar
    ¼ cup cornstarch
    ½ tsp. salt
    2 cups half & half
    ¼ cup butter
    2 tsp. vanilla
    Cinnamon or nutmeg
Whisk together sugar, cornstarch and salt. Add half & half and bring to a boil, stirring, over medium high heat until mixture thickens and boils. Remove from heat and add butter and vanilla, stirring until butter melts. Pour into pie shell and sprinkle top with cinnamon or nutmeg (or both).
Bake at 375 for 15 minutes or until top is lightly browned. Remove from oven and let cool, then refrigerate until cold.

Well, that looked lovely. Here is the secret to Meringue on any pie. 1/4 cup of sugar to 2 egg whites at room temperature. Gradually add your sugar once they start to foam, slowly add the sugar and beat until just stiff. then take it by the table spoon a dollop at a time and put it over the top of the pie and put it under the broiler as you normally do watch until golden brown. But that is the secret to your big piques of Meringue. Quite simple and you will be so pleased. I get fat just thinking about eating that delicious pie. thanks Tipper.
