LOOKING FOR A DELICIOUS GRILLED PANINI SANDWICH? HERE’S A FAVOURITE, ALONG WITH IDEAS FOR MORE. NOW LET’S GET GRILLING!
Sandwiches have long been my go-to when I’m pressed for time. So long as there’s bread within reach, I’m game to hunt for ingredients through the cupboard or fridge and create a fabulous sandwich.
My enjoyment of homemade sandwiches increased significantly when friends gifted me with a panini maker. I suddenly could make exceptionally delicious creations that have that signature crispy outside with each bite, followed by the warmed filling.
If you don’t have a panini maker, fear not; you can make these creations in a skillet on the stove top. If you’re so inclined to purchase one, I’ve listed my favourite panini maker in the Amazon links below.
On to my favourite GRILLED PANINI SANDWICH combinations:
NIK’S FAVOURITE
As featured in this story! A sprouted three-grain bread, Edam cheese, sliced turkey, tomato, avocado, alfalfa sprouts and a pesto mayonnaise. Butter the outside for crispy grilled bread that heightens the flavour.
CAPRESE
A six-inch square of Italian focaccia bread sliced in half and brushed with herbed oil. Add layers of thin-sliced tomato, buffala mozzarella, fresh basil leaves and baby arugula tossed in olive oil and balsamic vinegar. Finish with salt and pepper and grill until the outside is crunchy.
APPLE PIE GRILLED CHEESE
Using your favourite sliced or artisanal bread, smear the outside with our cinnamon sugar-enhanced butter. For the centre, we’re tossing grated cheddar with crispy apple. This tasty sammie treat has been kid-tested and they love it. Make it your new go-to for breakfast, lunch or even dinner. Yum!
INGREDIENTS
For Nik's Favourite:
2 slices of 3-grain bread
1 tablespoon of butter
2 slices of Edam cheese
3 slices of sliced turkey
1 slice of tomato
handful of alfalfa sprouts
½ an avocado, sliced
1 teaspoon of mayonnaise
1 teaspoon of pesto
salt and pepper
INSTRUCTIONS
1)Set panini maker or skillet to medium-high heat.
2) In a small bowl, stir together pesto and mayonnaise.
3) Lay slices of bread on a piece of parchment paper and lightly butter one side of each. Flip slices over.
4) On one slice, add in order: a slice of cheese, the turkey, tomato, salt and pepper, alfalfa sprouts and avocado, then finish with the second slice of cheese.
5) Spread the pesto mayonnaise inside the second slice of bread. Close the sandwich up, place on the panini maker or skillet, and grill for 5 minutes. If using a skillet, flip the sandwich over at the 3 minute mark and grill for an additional 2 minutes.
6) Cut in half and serve immediately. Garnish with a pickle.

I just bought a panini machine. I then went out and bought your ingredients to make this sandwich including kosher dill pickles. I made sure to butter the outsides of the bread. It was so good I wanted to cry!

First, you got to admire a guy who responds to his fan base. Obviously, Nik is good people. You know Nik, I put a touch of horseradish in mine and it really enhanced it. I'm a type 2 diabetic and ate three of the sandwitches ! Not good. But, they were so good. God Bless from Kansas!!!

We take waffles seriously in our house ua-cam.com/users/postUgkxUfphIgghPSpAXNq6OG2WRYsFVqylcqMn and worked our old one through many years of Sunday brunches till it finally gave out on us. Our old one only made two at a time, this one makes four! Nicely sized 1 inch thick which are lovely! Now the kids don't have to wait as long to eat our weekly waffle breakfast and everyone's are hot if we wait and eat all together! Setting 3 seems to work perfect for golden brown. Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!

My favorite panini machine sandwich is a Ruben sandwich: black rye, Russian dressing, corned beef or pastrami, onions, and surkraut. My other favorite is a spicy Mexican qasidia. I love my Brevelle panini machine.

I have that exact panini griller. But I hate how it squashes my sandwich and flattens it. So I either just use stovetop or the one side of the grille.
Hey VL! Thanks for writing in! Yes you can do stovetop or one side. Have you also notice how the top of the maker can be adjusted by the little button on the side? It helps to not squish!!!

No such thing as a panini maker in Greece - in fact, never seen a panini here -- BUT I have a toasted sandwich maker (which is only small) but I also have a George Foreman grill which I have never used (and that's much bigger) - am going to try this on the GF grill --- wish me luck.

We love our Cuisinart Griddler but won a T-Fal Opti-Grill and it is even better as it does a few more things...and from frozen.

When i make panini sandwiches,my bread always gets dry but the cheese inside doesn't melt.I tried high heat and low heat and every time its the same.I am using a bit thicker bread,so is this the problem?Any tips?
We like that mid-range temperature... and then, with the lid down... be patient - give time for the heat from the top and bottom of the press to heat through the two pieces of bread. For sure thickness of bread and even the type of cheese will affect "the melt". Try with thinly sliced bread and soft cheeses... like mozzarella, havarti or mild cheddar. Yay!!!

Hi Noted! Every maker is different but we found medium setting with 5 minutes per side toasts it up perfectly.
