Keeping in fridge is not mandatory. If you have the space u can store it in the fridge. Else any cool shelf away from direct sunlight and moisture is fine.

My only issue is there is so much foaming on the top for me and can't really see if the butter has become clear. Eventually the ghee is turning dark. Any suggestions?
Couple of things u can try are...1. Reduce the saute setting to low. 2. Use a watch to time how long it usually take to reach the idead point. 3. Turn off the ip the second it starts foaming. You can always turn saute back on if needed. All the best.
In some places the milk solids are mixed with sugar to make a sour spread called Godari. In Egypt, they call is 'Morta' and they use the milk solids as a spread.
There are so many IP models and versions so I am not sure if this will work for you....but...pressing the minus(-) for 3 seconds and then pressing the plus sign for 3 seconds should turn it back on. If that doesnt work, maybe calling them or opening a help ticket might help?

Curious- what brand of filter coffee powder is closest to the South Indian one in the US?
If you are referring to 'decotion coffee' found in Tamil Nadu then I would recommend 'Bru'.
