Sam doesn't need a scale. I guarantee if you weighed them they would be on point.
As a resident of Minneapolis, the secret to sealing the burger to prevent juices and cheese seeping out, is to have the bottom patty being slightly larger than the top patty. Wider specifically not thicker. This way when you are sealing you can 'fold' the bottom patty up and over the edge of the top patty.

Exactly, almost like a bowl with a lid. And you always cook with the bowl side down first.
Love this episode! I live in the Twin Cities and here, this burger is epic. It was born at Matt’s Bar in South Minneapolis and named the “Juicy Lucy”. No better burger around. But Sam... you forgot the grilled onions. That completes the experience.
Also raised in South Minneapolis, also raised on Matt's Jucy Lucy (no "i", that's for the inferior product down the road).

@@jrw0707 I'm not arguing where it was born. Neither business can seem to prove it was them and I was not around in the 50's. But, as far as the best Jucy Lucy goes, Matt's tops them and 5-8 (more cheese, but somehow less flavor) isn't even in the top five throughout the twin cities.

Thank you Sam for these uploads. I’ve been watching them non stop. I have been battling with my costochondritis lately and you’ve been helping me relax. I’ve been having panic attacks due to it and my heart rate goes straight to 115 doing nothing. These help me drop down into the 80s. Thank you from the bottom of my heart.
That's good news - cheers! I don't want to sound like every other asshole on the internet, but have you heard of Wim Hof? Awesome breathing methods to calm anxiety, similar to meditation - he's a bit extreme tho lol. And anti-inflammatory herbs like turmeric, ginger, magnesium and fish oil will help as well. My daily is turmeric and a vitamin called Stress Guard from Oregons wild harvest - B vitamins and ashwagandha and other stuff. I only say this because I have anxiety and these help but to each their own - just throwing it out there in case you haven't heard. Best wishes.
@@johnb7046 I’ve really started on the vitamins upper body back, rib and neck scratches. I have never heard of him though. This is the first time in my entire life I’ve had something give me anxiety. It’s far from fun and will never hold it against anyone again. These fake heart attack feelings are horrid. Thank you for the advice and I will continue digging deeper into this and adjust my life to combat this.
@@Sackmatters Hey no prob! Honestly my life changed after I learned a lot of yoga techniques. It helps anyone and everyone - even the MMA fighters do it.
I understand the feeling - although I don't have the medical issues you said you do. It's an overwhelming feeling, Its helplessness. But I've thankfully been able to minimize it and conquer it through breathing techniques and (maybe placebo) vitamins. And I hope you do too. The best cure is to stay active, eat well, get sunlight, be social, and dont give a F what others say! Do you and do it well my friend. Peace!
@@johnb7046 The problem is I’ve been over active with my condition. It’s from strain or over working parts of the back or neck causing extreme inflammation in the ribs and connective tissue to your breast bone. Causing you to have fake heart attack feelings and symptoms. Sad that I have to kick back but also happy that I can take a break and solve some of these issues.
@@Sackmatters Yea, physical damage sometimes can mess with things. Keep stretching, and maybe the vitamins will help or not. But the key is stretching. Like I said, yoga changed my life. It helped with a lot of my neck issues.
And you can do this all on your own time, any time any place! Do what you feel works at intervals. Slowly but surely, even if youre active, you can overcome the everyday pain. I suck at pain management, so you do you!

Minneapolis represent! Was just at Matt’s Bar last month. It’s traditionally done with some sautéd onions though. For real though, you need to come here. It’s one of my favorite food cities and in my opinion the second or third best coffee city in the US

Hi Sam & Co. A former Minnesotan here ... used to go to Juicy Lucy's all the time on Cedar. Let me tell you it was damn good and cheap if I remember correctly. A lot of knock off's appeared as time went by but DAMN it was the best burger I ever had. Thanks for the memories :)
I just wanted to say how much I LOVE how you inspire my menus at home. I consider myself a relatively "okay" home cook, and your videos give me so much inspiration to shake up our meals without having to source ingredients outside of my local grocery store. According to Burger Scholar George Motz, the name Jucy Lucy came from the first guy who ordered one. He asked for a burger that was different so the fry cook put the cheese in the middle of two sealed patties. The patron took a bite, the cheese ran everywhere and he said "BOY THAT'S ONE JUICY LUCY!"

I live in Iowa myself, I HIGHLY recommend visiting Minnesota - They've got gorgeous nature parks there, and it's just a really relaxing atmosphere in the outdoors-y areas there. I've gone up to Minnesota 16 times in the last decade, and have loved it every time. Plus, hell, you could even do an outdoor camping cooking video episode. :D

@@phionfire look it up!!... dyers burgers is a staple on Beale st in Memphis. They smash the patty then shallow fry it in grease that is supposedly over 100 years old. I visted Memphis over a decade ago and to this day this is the best burger I've ever had

I made this recipe last night and it was out of control delicious! Love your channel guys, thank you and keep it going!
I have found putting ground beef in the mixer and letting it go for 5 minutes with butter, salt, pepper, and egg, and some bread crumbs makes it very sticky and easy to shape or pinch together. And it stays juicy/moist. You can add a little sauce for flavor too, just not too much or it gets too wet and it won’t stick together.
I called my cousin in International Falls and she confirmed that Minneapolis is the Nether Region of MN.
You go to International Falls freeze to death -30 not uncommon .
Mpls had Juicy Lucy 44 years ago at Matts with 3.2 beer .It was flatter but good.The beer was eh not so good..

I LOVE stuffed burgers! However, the way I stack them is a little different. Rather than just stuffing them with cheese, I like to put a layer of baby Swiss, a layer of sautéed mushrooms, and then another layer of either baby Swiss, provolone, or Havarti (because white cheeses compliment the mushrooms best). On top of the burger, through on a few slices of a nice smoky bacon and just a LITTLE bit of sautéed jalapenos (or, for people with a high tolerance, habanero or ghost peppers--the natural smoky flavor of the ghost peppers is perfect for a burger if you have the tolerance for it!).
I almost never comment on videos, but as a Minnesotan who grew up on 'Jucy Lucy's" I am glad you made this video!
My favorite is from a bar south of Minneapolis called Buffalo Tap, they make an "El Diablo Jucy Lucy": pepper jack cheese, jalapenos, and very spicy BBQ sauce. Perfect with 1919 root beer from the tap!

Tip if you make it! To help with the cheese not oozing out of the edges, freeze the cheese for like half an hour before you put it in the burgers! The cheese will be a tad frozen and that extra bit of time for it to start melting helps with oozing tremendously! Just made 3 Lucy's with the fam and even with my shoddy edging (pause) it still didn't ooze out that much. (oh geez)

Yeah well no mince eva should be still raw .cooked to doneness ,mice has gone throw a blad process, which means the meat has been exposed to surface areas off of the blad so bacteria is inside the patty not like a steak ,only on each side .
Mince needs to be cooked or you'll be sick .....but this recipe is delicious just make it done right 👍😀

The original from Matt's Bar is actually spelled Jucy Lucy (no idea why). The name came from a customer requesting a burger with cheese inside two patties, it wasn't on the menu. When he tasted it, he said "now that's one juicy lucy" and the name stuck. True story.
Aaaaand here we go... :). It could be argued that the "original" was from the 5-8 Club. I love this debate...usually good natured. I'd vote for 5-8, but only because I've been going there since I was three years old. Matt's is great too!

@@54kasey The 5-8 versions are great, the PB&J is a personal favorite, I love that place. I too have heard that the 5-8 also claims to have the original, I don't think anyone would be faulted for saying either was the first. Both are great places.

I made something like this back 35 years ago in high school when I cooked for a local Restaurant. Every once in a while we had a very difficult customer that kept sending the burger back to me complain it was either to dry or to moist but was exactly what they ordered. So I got fed up and made a burger for her the same way as in this video except I used Butter, so when she took a bight it oozed all down her blouse...... The priceless reaction..... moral of the story Never mess with the cook

Hey Sam and company - i love the show and recently it has inspired me to make many amazing things. believe it or not - you have changed my whole cooking life completely! i do however have to adjust everything you cook because my wife has a lot of very inconvenient allergies. These include soy, wheat, and gluten. I have been able to make many of your ideas using gluten free flour, or coco aminos instead of soy sauce, but I was wondering if you could do an episode for people with allergies who love food as much as I do and as much as I feel like you do. thank you so much for the show and I hope you continue to provide great content.

My dad used to hang out at Matt's, he had a office on 38th and Chicago. (Yes the famous corner.) For some reason he loved the 3.2 joints. I remember the first Jucy Lucy I had with him sitting at the bar. I felt so grown up. This was in the 70's.

MN classic, some places use velvetta, you can go fancy with Bleu, Gouda, etc.
These are a fan fav around my house usually twice a month. I mix a packet of lipton onion soup mix into mine and lets my kid pick the cheese they want in there's. My personal fav as blue cheese.
Did this today with Yak burger and Mozzarella balls. Holy wha!!! This is wonderful!
