Late summer ritual Sunday dinner: Pepperonata with grilled ring sausage and a green salad with some cubed cold boiled potato and oil and vinegar. For the pasta to start, pasta ala Norma. Some red wine and good Italian bread to clean the plates.
Oh ya! The food you cook at times looks fairly complicated but after further review, it’s really not! You let the ingredients do the talking and that’s what Italian cooking is all about! I used to spice and season my sauce till I killed it! Boy have I been missing out!! Thanks for another great video!!
Hi Jim! Oh this is wonderful! I used to have a HUGE veg garden. I still have a small herb garden and grow basil on my front porch in pots, but I want to start growing a few things again next season! Peppers for sure and maybe some lettuce. Thanks for sharing!
Riffing on the Pepper and Egg idea, I bet you could also make some divots in the peperonata and poach eggs in it like a sort of Italian take on Huevos Rancheros or Shakshouka.
Is there any pasta application for this? I know I could just toss it with some pasta and water to create an emulsion for a light sauce...but what shape would you use? Would you add anything extra like cheese?
I add olives and capers to my peperonata if I'm using it with fish. And if I'm having the peperonata on it's own I also add a can of tuna. Any left over peperonata I use with pasta.
Do you cook for 45 min without covering with lid? Just got a full bag of bell peppers from the garden, cooking now full huge pan of them.. it’s easy recipe but hej I would appreciate someone to cut for me all the stuff :) will add white wine vinegar (no red at home) and some chili flakes for the taste.. planning to keep in freezer several portions
Thanks! I use Aputure 120 dii for key light and Godox slw60 and Yongnuo YN360 lights for fill. I still need more light as you can see the background is very dark. If I let light in through the window it's too bright. Ideally a side window in a kitchen would be best. I'm no expert on this and I'm sure there is a way to properly shoot with the backlit window with an ND filter or a videographer. I don't yet have either of those.

I have no idea how this total change of a word’s meaning even happened!! So in Italy, order a pizza with ‘extra pepperoni’, and you will get, 100% guaranteed, extra bell peppers. You need to ask for ‘extra salami’ or ‘salamino’ - or use the local name, to get what we think of as pepperoni. Quite crazy i thought!!! PS - lovely recipe, as always!!
