Yes, It was a 24 month old grass fed- grass finished Angus steer. We purchased the steer directly from the farmer and the farmer in turn works with a couple of processors and we chose one of them to process the beef which we then paid the processor to do. Which is why there are two separate costs.
Hanging weight versus finished product weight is always going to be different. There’s a lot of stuff on that cow you’re not gonna eat like the bones, etc. And most of the guts.
