Perfect timing on the Ceviche!!! While I've made a shit ton of Mexican food I've never made Ceviche. I'll never forget the first time I tried it!! I definitely had my doubts but Man was it ever Good!! Living in Texas sure has its Perks!! Great Mexican food, Great Tex Mex,Great BBQ and of course Great Seafood!! When we go visit my Moms side of the family in BC Canada I cant wait to get home and eat some real food!!! I actually feel sorry for those Canucks,everything they make is bland. When they come to Texas I make it my mission to show them what real food is all about!!! Even with their Heartburn they rave about our brand of food!!
I live in nor cal… same ingredients but we add Clamato juice… ironically it may be a southern cal recipe who knows…no matter what your preference or taste THUMBS UP👍🏼
Arnie, I just discovered you. Your videos have helped me so much in food-prep/eating better. I send you as much love as I can from the Wisconsin Northwoods. I wonder if you have any recopies that factor in our local fishes (Northern Pike, Walleye, Musky). Also what recepies are best to implement our local love of dairy (Lots of cheese). If you've never tried it, I've found Venison is THE BEST meat for tacos. I highly recommend trying it. It's a local fave, Thank you so much for your friendly videos.
Looks delicious 👍🏼when money is tight we’ll use cans of tuna and imitation crab. My uncle in Mexico makes it with ground beef, using the lemon to cook the meat for their ceviche 👍🏼
I’ll have to try using 2 kinds of onion because I only use red. I dice everything fine and core the tomato beforehand but besides that pretty much the same as me. I usually use basa-basa or monkfish.

Would that be Sea Trout or Rainbow? I'm thinking Rainbow could be a little soft, and also they are a mountain thing, which I don't think there are many of in south Texas, but..... in FL Sea Trout are a game fish I think, and I don' remember ever seeing them in any of the seafood markets, except farm raised which is a little iffy too. Can you reuse the citrus juice to cure more batches of shrimp? Does it become unusable or contaminated afterwards? Would there be enough citric acid from the remainder?
I love how Arnie uses a plastic hairnet to cover the ceviche. So down home it's funny. Would be better if it was Bahamas-style and used conch imho though.

My father is a chef in the DC metropolitan area but was born in Arequipa. Cuisine and especially Latin cuisine is big in my family. If you take 2 tistatas put beans in between then a small layer of Mexican rice on top. Then cavicie. It's great. I do it often.
