    Awesome! Lived in Texas for 40 years and retired to Arkansas. Up here they have no idea what they're doing with brisket! I sure do miss Texas BBQ and brisket. Thanks for your great instructions.

      Back when I went to Texas twice a week Brownsville had the best in my opinion. Their brisket tacos were amazing topped with a little pico de gallo.

    I am Texan born and raised. I was unfortunately transferred to the Philippines almost 4 years ago and I miss Texas with every beat of my heart. I would like to thank you for your channel it is my go-to place for watching our beloved food being prepared. I don't have mesquite, post oak, or pecan here but I am experimenting with some native woods. I watch every video that I have time to see and I settle down to watch my Astros afterwards. Keep it up, my brother you're doing God's Work. Until I am back home. Smoke it up for for your bro!❤️🤠

      Man, I kind of envy you a bit. I LOVE the Philippines! Have you looked into a wood pellet smoker, I think you can buy imported oak wood pellets, maybe pecan and mesquite also! That would be my first action if I found myself living the dream in the Philippines! I'd be enjoying those pristine beaches during the day, and some wonderful Texas Q in the evenings!

    I was born and raised in the Texas Panhandle. Our recipe up here is a little different, but the same results. I was driving a truck coast to coast, and stopped in Florida several years ago and came across a BBQ restaurant attached to a locally owned truck stop. I went in to get something to eat, and the young girl behind the counter pulled a whole brisket out of the hot box, and then began to slice off the bark (fat cap). I asked her what she was going to do with the bark. She said they discard it. I told her "Oh Hell, No!! You include that on my brisket plate. I'll even pay extra." She was confused. I explained that in Texas, throwing away the bark is a cardinal sin. It's the one part of the brisket with the best flavor, and the most coveted part. She included the bark on my plate. As I was eating my meal, she came by my table and asked me if it was really that good. So I offered her a taste. Her response was, "Why are we throwing this away?!?" I know right?!? I know every part of the country, and the world have a different way of smoking a brisket. You can never beat a REAL Texas Brisket. Thanks Arnie for sharing your process.

    I've been seriously getting into smoking poultry (turkey, chicken, duck) and pork shoulders for over a year now and this weekend I graduated to brisket. I watched several of your videos on brisket and applied your tips and steps to the best of my ability and it came out great considering it was my first time! Thanks for putting up the content. I'll be asking my family to gift me your masterclass course for my birthday this year! and if they don't then I'll just sign up myself.

    I followed every single step from start to finish,and after a 12 hour cook the fire dying once (I fell asleep) and 2 hour rest. This is by far the best brisket I have ever had this being my second attempt on my offset smoker. Thank you so much Arnie you are the best!

    Almost exactly the same prep/cook. Got a couple of good tips (spritzing the paper stood out). Now if the price of brisket would come back down.

    That’s a great looking brisket out of the wrapper, but even more when you were slicing it up! The LSG is a game changer for me; I’m going on three years own a small 20x36” LSG offset. Briskets, pork butt and spatchcock turkey keeps me enjoying the smoke! 👍🏽😎

    Turned my Recteq on this morning from my phone. Put my brisket on. Then watched this video while I drank my coffee to get tips and pointers. Need to finish you master class videos. I've been stuck on Reverse Searing Steaks for the Family. Have not had a lot of free time for Brisket and Ribs on my pellet grill.

    I love your channel! I just ordered a hasty bake. I'd never heard of them and I'm 62! I was born in freeport tx and i still live in that area. I'm a fajita fanatic! I'm going to try your method.     That's how I grew up.
    White bread, pickles, onion, beans and potatoes salad. That's what goes with brisket. Oh and a spicy, non-sweet BBQ sauce if you want.

    Just moved to Georgia after 23yrs in Texas. I miss this brisket with a passion!! I've given up trying different places after dried up, beef jerky like, no flavor, burnt, stringy waste of meat. After finding your videos I'm gonna try my hand at it. I'm sure I'm gonna fail a few times but will taste better than anything here in Georgia!!

    I'm not to prone to having mustard as a binder I usually cut off the fat and make my own magic brisket rub that's been my family for like 60 to 70 yrs and I miss Texas with a passion great job on the brisket it has a great smoke ring on it

    Misplaced Texan here (Corpus Christi), this video really makes me homesick. This is the method I’ve used in the past, but it just doesn’t taste the same in Nebraska as it does in Texas.

    Lol. Had my doubts aboy"Real Texas brisket". But after watching this, I'll take a slice of yours anytime. I , like you start Fat side down. I'm not biggest fan of the mustard (I do sometimes use it). Having cooked a few in last 50+ year, have varied the cooking; but it always came back to this basic method. Kudos & count me as a Sub.

    I'm gonna be doing my first ever brisket tomorrow ... gonna use this technique. Hopefully it turns out. I don't have mesquite so hopefully the hickory I'm using is good enough.

    Love watching you cook your meats, whether its fajitas (all the different kinds of meats) or your brisket. I notice that after you wrap your meat, you put it back on the smoker to finish out the cook. I've found when I do that, I use up all my smoker wood and since the meat is wrapped, its not getting any smoke flavor on the meat anymore, essentially feels like I'm wasting the smoke at that point. So I've been finishing my briskets in the oven and they come out exactly the same as if I'd finished them in the smoker, and I've used less than half the amount of wood otherwise. One BIG benefit is if I start the brisket the night before and its reached the point where time to wrap it, then I can just set the oven heat to ~230 degF and then forget it until the alarm goes off when the brisket reaches internal temp ~195 deg and I can catch a few winks of sleep in the meantime instead of having to check the firebox every hour! I know it sounds a bit non-Texan, but I swear by it, and I don't have to go out and buy wood as often. I prefer pecan for my smoke, and its getting harder and harder to find lump pecan wood in the west Houston/Katy area. Thank God for Buc-ee's, but sometimes its not quite so convenient to drive to one when running low! What are your thoughts about finishing a brisket in the oven where all it needs is heat to finish the cook?

    I personally do not use mustard. Instead I use bacon fat. Appreciate that you use salt and pepper mixture. Seen videos that make "Texas style" brisket and they always apply them separately (not even going to mention what else they add). It is amazing how difficult a good brisket can be when it is just fire, smoke, meat and salt and pepper.

    I’ve had all kinds of BBQ from one end of the USA to the other, and my absolute fave is still - Texas beef brisket! To me, it’s the ultimate grilling/smoking/bbq challenge to do right, and it’s my #1 test of any new BBQ joint I try. Viva la Texas Brisket! Via Arnie Tex!       @@ArnieTex I have never cooked or ate a piece of meat so good. So tender we cut with a fork. Very juicy. I wrapped the brisket in foil and parchment. I set the brisket flesh side down on the parchment coated in beef tallow. Added a little beef broth.

    I spritz my briskets with pickle juice, picked it up 10 or so years ago from some dude at a bar who suggested it and been doing it since, I swear it makes for a better bark. (No it doesn't make the brisket taste pickely)

    Brotha man I pretty much do the samething but make burnt ends and put that on a sheet hit it with og & Texas bbq sauce beef fat and salt with pepper throw it in the oven with broil and enjoy and the rest we chop it and make brisket nachos 🎉

    Arnie, thanks for the video! I have some of questions for you. I wasn't able to look through the comments so I'm sorry if you already answered these questions. 1) Where can I get that sprayer you used? 2) When buying post oak from guys in the valley or SA, I have become suspicious that I'm really buying live oak. Where do you buy post oak and how can you tell the difference from live oak? 3) How do you personally cut the point? Thanks man! I appreciate your time and your work.       I buy the bags of wood at Academy or Propit or Teds Borderland hardware, it's not always perfect wood either but much more consistent, the sprayer is a garden sprayer, sanitize with vinegar and water first, how I cut depends on whether its a catering / backyard brisket or a comp brisket. i don't normally separate the point and flat nor do I usually dig out the fat in between unless it's really excessive.

      It was a gift from a friend but I think its just a garden sprayer, make sure you run a little vinegar in it first to sanitize before you use it as a food sprayer.
