To get the panadapter display in black with just a coloured line go to Visual / FFT fill / disabled. Have you tried connecting it to a computer with SDRuno or such like ?
This receiver is far superior to SDRuno, I own both and this hears far more than the sdruno and the noise reduction is second to none I haven't touched my other receivers since getting this last week

Tapping the signal peaks at the top of the screen will enable it to jump to that frequency

Tapping waterfall changes the bandwidth not freq. I did a short video about this ages ago
