    Public, please don't miss the message about this man's video. He did this for his wife! You may not approve of the recipe. Quite frankly, as a chef, I think he did excellent with the ingredients. Please don't be so mean for those that have commented negatively. When a man is willing to cook for his wife, that's a "good thing." Oxtails, as he mentions at the beginning of the video, can be made Jamaican style, American style, Chinese style and also Creole style. He did an awesome job from his native background. Happy Birthday every day to his wife!

    THERE it IS! there it IS! omg i have beenllooking for this recipe for 7 years. My jamaican friend explained the process to me, but i never tried it ( Hes since passed away, God bless him) but i never seen anyone do the process that he described.. This looks fabulous and i cannot wait to add this to my families menue..god bless you sir and your dear grandmother!

    First off you look like and remind me of my late pops. He loved to cook and he was from the NOLA. This recipe is by far the best ox tail I have seen..Gonna try it this weekend for my sons..       I can go for some oxtails tonight but tonight my wife is making a chicken pot pie homemade so I’m going enjoy what I can. prices of oxtails have gone through the roof. It’s hard to find a good deal on 20 pounds or more.

    First of all, you're just wrong for this video! was just minding my business on UA-cam looking for a new Mac n Cheese recipe when I ran across this video. Now the reason you're wrong is because if you cannot mail everyone a sample you need to take that video down. Those Ox Tails look so freaking good. I'm sitting here with my tongue hanging out.     Okay so I tried this recipe and all I can say is WOW!!!! Even my neighbor who thinks the sun rises and falls on her kitchen had to admit that these were the best oxtails she's ever had and are even better than hers. They were perfectly cooked, flavorful, tender, rich and delicious. I was a little shy with the scotch bonnet peppers but next time I'll be a little more liberal, otherwise it was the perfect comfort food. I made mine with a side of white rice and cabbage and dinner was delicious.Thank you so much for sharing this wonderful recipe.

    By far the best oxtail recipe I've seen. Baking makes the difference to infuse the seasoning with the meat. I know they are tender and falling off the bone. Yummy Thanks

    Good recipe man! A good idea also is to through a good big spring of rosemary into the pan when you braise the oxtails! gives them such a beautiful aroma and flavour.

    I trim mine of excess fat then dredge in a mix of salt, pepper and plain flour. I then knock off the excess flour and sear the oxtails in a cast iron pan with a little oil until they are well browned and a little crusty. I don't need any browning, as I transfer the oxtails to a lidded iron oven pot remembering to deglaze the fry pan and pour that in with the oxtails coz thats all flavour baby. I add onions and carrots and leave it on a low heat for 4 hours. by then it is well done and should just fall apart. Serve it up with buttery and parsley mash potato.

      wait until after the ox tails are cooked then take a large cooking spoon and skim off all the oil. as far as a wine to deglaze the pan use any red wine that you like or enjoy to drink what I do is I save wine that are left over from dinner that's not enough for a full glass pour them into a large container and save them for when I make issues like this. Another trick if you can wait , is to wait for them to cool down place in refrigerator allow the oil to harden and remove it then. bon appetit

    I followed a similar recipe, cooking mine in beer for about 4 and a half hours and they were stunning. Most delicious and tender cut of beef you can get. If you have never tried oxtail, you must!!

    Great and very precise video. My dad is a Giech from South Carolina. My grandmother use to make them almost like that. But since she was a Holy Rollie, the alcohol would have been a definite no no. But I cook with alcohol especially different types of beers and wine.
    So I am going to make this dish complete with white rice, black eyed peas, fresh collard greens and corn bread. For desert homemade banana pudding! (I make my own Vanilla Waffers) while I listen to a recording by Frank Sinatra and in the end I can truly say "I DID IT MY WAY! "

    This will be my first time making these. I love the way you explained it. It looked sooooo good. You explained it better than some these cooking shows that on TV. Keep up the good work and what if you don't have a food processor, what can I use to make that paste. I will be waiting or that cookbook if you decide to do one.!!!

      Hello Desiree, Thanks for the kind words.. if you don't have a food processor no worries just dice them up as fine as you can or add them to a blender if you have one and proceed with steps the veggies will cook down and almost disappear. Oh and by the way I tried my food processor last week after maybe 10-15 uses and that buster is not working...Per the net it was a dud from the start. So now, I have upgraded to a commercial unit named Robot Coupe with a history of working hard... (smile) Cheers.

    yep I make mine the same way. I use sofrito and mix it well.allow it to marinate. etc.

    Nice. But I believe it is better to use fresh garlic and ginger, and also cover the pan so the scent and juices are more trapped in the food.

    SAVE THE OX TAIL BONES & MAKE BONE BROTH FROM THEM...THAT IS WHERE U GET NUTRITION....U CAN ZIP BAG THE OX BONES, UNTIL U HAVE ENOUGH BONES TO ROAST & THEN SIMMER ON THE STOVETOP LOW FOR 48 HOURS.....DO NOT USE A CROCK POT TO SIMMER BONE BROTH...

    When I was a kid back in the 70s nobody ate oxtails and they were dirt cheap. Now everyone wants 'em and they're friggen expensive as hell. I have foodtv. They've taken most of my favorite 'secret' gem foods and let others know about them.

      Find a small farmer that raises beef for family and sends it to slaughter house and buy the oxtails from them when they slaughter the cow. Lots of white people don't eat oxtails could probably find farmer to sell them to you.
