      If you saw my inherited 60 years old cast iron Dutch pot ,you would have a seizure. If you ate what gets cooked in it, you would understand why it needs to look like that and be grateful.

    I have happy memories of my mum making this in the cold UK winters/summers. It would make the weather bearable 😊 Happy to see this,happier to make and eat it 😀

    My grand mother used to melt the sugar, just as it start to bubble, she used to put a spoon of curry on it, give in last turn in the pot and then trow the chicken. She never marinated the chicken with the curry. I still make it so today. But you have to be quick b4 the sugar burn lol.

    Oh wow that is making me hungry! It looks so good! I don't understand why anyone would would think something is wrong with using a metal spoon. This is not a no-stick pot, so it doesn't matter, and you are right. A metal spoon doesn't bend so you don't have to worry about a bendy spoon snapping back and splattering you, your stove, or your counter with hot liquids. I also don't understand how anyone can say it is not a Caribbean recipe. You are Caribbean, you are cooking it in the Caribbean, and you do it in your family's traditional way, and they were Caribbean. If it was a peanut butter and jelly sandwich, it would be a Caribbean peanut butter and jelly sandwich even if it was identical to an American peanut butter and jelly sandwich! If it's similar to something someone has elsewhere, it's because the Caribbean is the world's ultimate mixing pot, with influences from everywhere, as well as its own unique influence. Caribbean cuisine is so much more than blacken chicken or blacken fish, and I am really glad I have found a truly authentic source for traditional recipes made by someone who has known this cuisine all his life. I have made your Okra and Tomato Stew (I'm crazy over both Okra and Tomatoes, so it was irresistible to me, and I loved it as much (or maybe more) than I thought I would. I also tried the Curry Stew Goat, and it was glorious, so I am thinking the Curry Stewed Chicken with Potato will be fantastic too. I mean really, what's not to like?
    I also saw a comment below which said, "get a new pot!" Don't you dare get a new pot! That pot is looking just like it should after years of loving cooking. Maybe the person doesn't know about patina and about seasoning a pot. I feel sorry for that person if s/he feels he or she needs to get a new one when it starts looking like that. This kind of pot is different than a steel, aluminium, or no-stick pot. You can tell that your pot is a well loved pot, and that is definitely a keeper!

    Anyone who claims that is a "make-up" recipe and not authentic definitely not from the Caribbean. My parents made their curry stew the exact way presented with only one difference, instead of water they used coconut milk and its the same way I make mines.

    I like to add more shado beni into my stews. I like the strong flavor it adds. I take 2 leaves and rip it up. And let it cook down

    I looks tasty! The chicken looks very tender, so this would be perfect for my mom! Is it possible to leave out the Scotch Bonnet? She’s not too keen on spicy food…

      yes, adjust the heat to your liking/tolerance and you'll be fine. enjoy. keep in mind that the grated ginger will give it a somewhat peppery note.
