Let's be fair about it: Mario not liking Mushrooms (at first) is like saying Popeye doesn't like Spinach (at first); which makes sense, given how Mario was inspired by Popeye.
My go-to mushroom sauce uses portobellos and has chicken and sun dried tomatoes in it. The mushroom flavor at the end isn’t super overwhelming, and the tomatoes help add some addition popping flavors to the sauce: I start off by browning some roughly cubed and cornstarched chicken tenders in a pan, seasoning with salt. I then add some sliced portobellos and fry them off until most of the liquid is evaporated, also seasoning with some salt. Then add some heavy cream, letting it heat through and get thicker. Add back the chicken, some sliced sun dried tomatoes, and season with salt and pepper. For the pasta, I go with fettuccine.

Funny enough blending them would likely fix the issue. Most people who dislike mushrooms usually just hate the texture. Although here it was entirely because Miyamoto thought it would be funny if Mario of all people hated mushrooms :P

I've always washed/rinsed off my mushrooms as I prefer portabella mushrooms. Those things like to hold dirt in some of those crevices quite well, and when pan-fried with butter until nicely browned gives it that nice, meaty texture. Mario would probably not eat my cooking.
plus a lot of the more affordable ones in regular grocery stores tend to have been poorly cleaned before packaging, with dirt and such still sticking to them even in more obvious areas. so a quick scrub/wipe and rinse can avoid getting dirt and rotting mulch in your food.
Mushroom pasta is one of those recipes that isn't fiercely garded by the italian authenticity mafia. You can just make it with whatever you got, LIKE PASTA DISHES SHOULD BE

the absolute joy i experienced when you said you were going to do pasta alla norcina (and that it’s one of your favorites) is unparalleled. when i studied in perugia, italy for a semester it was always my go to meal at restaurants. i’m always looking for it at restaurants in the states now

I found that a small splash of soy sauce really helps in making mushroom pasta. It's very unconventional, I know, but it improves the natural umami flavour a lot.
My son decided to go vegan last year. I asked him if he wanted anything special for his birthday meal a few months back. He said he really missed having my simple beef stroganoff that I'm sure lots of Americans have had before. Egg noodles with ground beef and cream of mushroom soup. Add some sour cream to kick it up. But he wanted it to be vegan. So I did some internet sleuthing and came up with a recipe for a mushroom vegan stroganoff. Wasn't that bad to make time wise but had a few more new ingredients like tahini. He loved it. I tried some since I didn't want to eat up the only vegan dish when I got to have pizza with my non-vegan kid and it was fantastic. I tried a little bit along the way for taste but once it all came together with the pasta it had so much flavor. I need to make it again but with a wider variety of mushrooms. This video has given me some ideas though. Thanks Andrew.

While Super Nintendo Lands was overall a sensory hightmare, the Mushroom Soup at toadstood Cafe was one of the best things Ive ever eatten. Super mushroomy with like 4 different mushrooms blended in a cream soup.
0:44 for me personally, I only wash them if they’re really dirty. If they look clean then I don’t bother washing them, but if they have dirt and stuff on them then I give them a quick rinse and dry to remove it.

I just made this pasta using the first recipe! Instead of shallots I used a little bit of red onion and a little bit of chives. It’s now one of my favorite dishes. Also, I used Parmesan and pasta that came straight from Italy, which I got some from relatives who just came back from vacation there.

I had a beautiful mushroom pasta from a seaside cafe in Bowen, Queensland. It was almost - _almost_ - perfect. The only issue was the oil. It was absolutely _drenched_ in oil - I actually put the excess oil in a water glass, and it came up to about halfway. But the taste of the food was phenomenal. Honestly can't remember enjoying any pasta dish more than that.
You should do the food scene from Lord of the Rings The Return of the King: Where the king bites into that cherry tomato and it gushes all over the place while Sawyer sings you a song and the babish team fights in the streets of New York.
Imho the best pairing mushroom with pasta is chanterelle. It has less earthy notes and more fruity characters. For a simple, cheese and pasta water based dish, you dont want overpowering mushrooms. If you are making more complex dishes with more layers, go with the more earthy stuff.
I made a fantastic mushroom pasta last week but I roasted mine with garlic, threw it in the bender and mixed that in with the heavy cream, added the white buttons and dehydrated some others with panko and butter to make a crust or crumble type topping
I not only like how he made a recipe from the movie but went back and added two other variations, as if trying to appease his local NY brother from Brooklyn. I'm down for all three, I love mushrooms in pasta.
I think you could even add some mushroom powder to it. You can buy it or turn dried mushrooms into a powder. It would oomph up the mushroom taste but not make it to mushroomy. I don't think it does at least.
I recommend using your wrist while zesting lemons. There comes a point where you grate through the zest and into the pith, which is bitter. Using your wrist to roll the lemon on the grater gives you a more effective and efficient way to zest citrus.
Honestly I was expecting to really hate this movie but it was great so many Easter eggs and me and my family laughed our heads off it's awesome can't wait for the second one if there is one

It's just a low-brow "funny" reference, it's really not even approaching any interesting literary devices, but I don't hate it.

If you add the mushrooms without any oil it pulls the moisture out better. I usually add oil or butter after they start to dry out, help em crisp

I recommend using your wrist while zesting lemons. There comes a point where you grate through the zest and into the pith, which is bitter. Using your wrist to roll the lemon on the grater gives you a more effective and efficient way to zest citrus.

I do wonder how many people are missing out on something they would really enjoy just because their first mushroom dish wasn’t cooked well.
@@WideMouth That was totally me as a kid. I had a dish that was super weird tasting and was likely just cooked really poorly. it wasnt until i was like.. 22. that i tried mushrooms again and realised i like them.
@@KitteyWolfI didn’t like mushrooms until my mid teens. I guess I had only had them steamed or baked without any sauce. Having sautéed mushrooms totally changed my mind.

Years ago Babish said pasta all norcina was a favourite in the Harper's Bazaar Food Diary video and was hoping we'd get to see a video of it. So, excellent. Look forward to having a go at trying it for myself
