    Ingredients
    2 tablespoons olive oil
    2 garlic cloves, finely chopped
    1 large green zucchini, diced (about 2 cups)
    1 (28-ounce|794-gram) can whole peeled tomatoes, undrained
    1 (15-ounce|425-gram) can chickpeas, drained and rinsed
    2 teaspoons kosher salt
    ½-1 teaspoon crushed red pepper
    2 tablespoons chopped fresh parsley
    steamed rice, to serve

    Kind of reminds me of my go to easy recipe when I have no fresh produce and/or energy-- a can of crushed tomatoes, a can of chickpeas, and a can of coconut milk. Then add maple syrup and lemon juice and tons of garam masala and whatever other spices tickle your fancy to make a curry. I will have to try this version though!! I'd probably add harissa paste for extra spice

      i've had a can of chickpeas in my pantry for months not knowing what to do with it, this sounds perfect for being lazy around the holidays xD

    This reminds me of a qorma. It’s a common dish made in Central Asia, specifically in Afghanistan and Pakistan. People have different renditions of it, but this one made with chickpeas I would eat with Afghan mantu or any rice (Kabuli palaw, green palaw). It’s a go-to dish 😊

    Gonna doctor that up with a significant amount of more spices and aromatics. Looks like a great foundational recipe you could take in many different directions flavor profile wise.

      exaaactly, it's a perfect base recipe. I'm gonna personally add more veggies, spices, and some proteins to it, but the fact that it can exist in this simple form is beautiful

    I've made something very similar before, so tasty and easy for meal prep. I prefer it with cous cous rather than rice (make the cous cous with veggie stock water so you get extra flavour too). Great video as always!

    i do this dish quite often. i spice it up with ground cumin, sweet and smoked paprika. in the video she says she does this for her kids, so i think that is, why the taste is so simple

      These three spices are definitely missing in here. Would add a bit of cilantro and tomato paste to thicken it as well, but that's just me. :D

      I would probably just add some chili flakes. And I think this might taste really well with orzo instead of rice (I’m not a big rice lover)

    This looks awesome! I'm like Aria and not a tomato fan in chunks like that, so I'd probably get the whole tomatoes (they have better flavor) and blend em up so theyre smooth and make it that way. I blend jarred salsa for chips too and it makes it taste better I swear 🔪🍅

    I actually do something similar for meal prep: One can of chickpeas and one cannolini beans with mushrooms and veggies. Season with salt, red chilli flakes, garlic powder and nutritional yeast. I also will often cook my pasta in the soup/stew and top it with some vegan feta for a one pot meal.

    This looks soooooo yummy! I'd probably even crumble up some vegan feta to put on top (maybe some capers or chopped olives too!)

    this was so good! I added mushrooms, smoked paprika, a pinch of cumin, and topped it with avocado. This also got me to try parsley for the first time and I learn I hate it haha. Will probably try cilantro next time

    I love the cook book Practically Vegan. Seriously some of the tastiest and easiest vegan recipes. I can do almost any of them on a week night in 30-45 minutes and usually with things I keep in my house. Her creamy sauces have inspired my own variations and they are great bases. She has a chickpea stew in there that reminds me of this. Chickpeas, garlic, some spices, coconut milk, I add some veggie broth or water so it isn't quite as heavy with just the coconut milk as sauce, and sun dried tomatoes. Then at the end stir in spinach. Serve over rice or quinoa. It is soooo good. A friend of mine that had never eaten anything vegan actually asked for the recipe. But almost everything in there my non vegetarian or vegan kids (10, 13, 15, and 17) have liked enough to eat more than one serving and and not complain about missing meat. haha. I seriously recommend the book. I have a really good Vegan Asian cookbook that I love too if anyone needs a recommendation for that.

      I usually double it, except the coconut milk, and freeze some in individual servings. But it makes enough for more than the recipe says as is (and a little extra liquid). Probably 4 people easy. Especially if serving with rice.

      "Vegan Asian A Cookbook" by Jeeca Uy. She has a blog, The Foodie Takes Flight. I haven't used many recipes from the blog, though I am sure they are good. The ones I have looked at are a tad different than in the cookbook. I just really love the cookbook. The bao buns with char siu tofu and pickled carrots and cucumber are soo good. I cut the sugar a little bit but yum! (I also add a little water to the char siu sauce because in my pan it cooks really quickly). I make several other things from there too though. Just a lot of good ideas that you can then riff off of to make your own things with what you have.@@bianca-elenaduduman9094

    This one reminds me a little of the Panera 10 veg soup- add lentils and barely. Maybe split peas. Yummmmmm so hungry 🤤

    it's simple and cheap but you get a lot of texture variety. I might at a can of chipotles in adobo sauce, which is like 88 cents here.

    I made this today after watching this video when it was posted and it's great! I'm not vegan but I want to incorporate more vegan meals and this is perfectly. It's easy, cheap and delicious

    This reminds me of a dish I made a while ago, except that it had cumin, coriander, oregano and sumac for additional flavors. I think aleppo pepper instead of red chile flakes. Delicious, nonetheless.

    Such a simple recipe, you can modify it as you wish. I will definitely try it with a looooooot of mushrooms, because I love them =) And I will use chopped tomatoes, because I don't like big chunks of it.

      I would probably use a can of diced fire roasted tomatoes or the diced tomatoes that come with basil. This could definitely use some sauteed onions and mushrooms. Any spices would be great in this

    every time someone tosses the aquafaba from a chickpea can, if you listen closely you can hear millions scream out in pain
    seriously tho thanks for the video, was great :)
    the liquid from the chickpea can contains a lot of protein, I save the liquid and add it to control liquidness, you can also use it as egg replacement for vegan mayo (which you probably knew but def save the liquid it's vegan gold :D )

      I know it's sooo useful, I honestly cannot stand the smell. I should try to be better about using it, I've just found that anytime i save it, it grosses me out and just sits in the fridge for weeks until i throw it out. It's so smelly! lmaoo but if you have other recs lmk. I never make my own mayo and would probably just buy it tbh but if there are other ways you like to use aquafaba, drop em!

    Thanks for making this. I was curious about this recipe. Have you tried Chrissy Tiegen's Black Bean Tortilla Soup? It's fantastic. From the first cookbook but you can find it online. She uses cheese as a topping, but that could easily be vegan cheese to make it vegan. You'll thank me. Edit: It is a bit spicy.

    We call this The Standard Dish in my house. Swap out any bean and any green veg for variety. Also smoked paprika!!

    The fact that she was a vegetarian at age 9 reminded me of my great aunt. She became a vegetarian aged 11, *in the 1950's*! My Polish great-grandmother just went with it, surprisingly. The funny thing about it is that she somehow decided her vegetarian daughter needs to drink a glass of tomato juice every day after school. I don't know where she got that from.

    Have you ever baked with sunflower butter? There's a recipe for cookies floating around the internet that causes the inside to turn green because of a chemical reaction with baking powder. I can't remember if it's vegan by nature, but if not, it'd be cool to see if the vegan version still works.

      Carrots also have sweetness and a slight crunch. Bell peppers are good too

      The beauty of this is you can add anything you want really. Carrots, mushrooms, potatoes, peppers, eggplant, onions, even kale would be good.

    I would add some ground cumin, coriander and a pinch of cinnamon to give it a middle eastern flavor profile as well as some complexity 😊

    This would be lovely in the summer when you’re at the point of being over zucchini and it’s to hot to fuss over being in the kitchen too long. Add some marinated tofu “ feta” and a green salad and call it a dinner party. Also a fun challenge, have Aria cook a vegan dish he’d like and you can be the judge Merle.

    I'm Aria in vegan form lol. I need things ti be a bit more creamy or "cheesy" rather than tomato-y. This is the kinda dish I'd be dissapointed taking to work as leftovers LMAO 🙈 economical, efficient, practical but nothing special to look forward to 🤣 my bf would love this one - he values the above in his food over flavour. I just can't

    How is this considered a “weekday” meal on the original site when it takes AN HOUR AND FIFTEEN MINUTES??????
    But!, did it actually take that long? Cuz in watching, it does feel shorter - like a 20-30 min meal at most?
    I just cannot justify a workday meal being more than 30 mins. That’s my absolute max.
    UPDATE 2 MONTHS LATER: lol k i eat my words HAPPILY. This has become a weekly staple for me, except slight modifications: I add chunks of tofu and a cup and a half of lentils to soak up the tomato sauce so the overall cook time is way faster, and it’s even more protein and more filling! I’ve been making a batch of this every week and eating it throughout the week. Obsessed!

      I mean the things you are chopping is just the garlic and the zucchini. And the zucchini can even be a pretty rustic quick rough chop it won’t make a big difference.
      And the fresh parsley (though for weekday meals I just go with the frozen pre chopped stuff, when a recipe calls for parsley, good enough for me. Or just skip it all together)
      If it was me making this, I would just let it simmer as long as it took the rice to get ready to serve.
      There is no meat that needs to simmer a long time to get tender.
      You are mainly just simmering it for the tomatoes sake. Generally tomatoes sauces flavour changes if you simmer it for a long time. Like you will have some Italian grandma swear that you have to simmer it for 4 hours. But yeah not the sort of thing I would be concerned with for a weekday.

    Add some onion, carrots and smoked paprika powder to level it up and get some more of those complex flavours

    This by no means looks bad. I’d much rather eat this than virtually any fast food or frozen meal. But looking at the ingredients, this just seems like minestrone but kind of bland. Adding some onion and carrot, multiple kinds of beans, more dried herbs and spices, a vegetable bouillon, and some greens would add maybe 5 or 10 min more prep time but make the meal a lot tastier and also healthier. These are also very cheap ingredients.

    Nathalie Portman is one of my favorite actress, she's clever and yet simple and funny. I remember about that video of chickpea recipe, people saying it was kind of boring... But not as boring as bread and butter 😂 😊

    Honestly I don't mean to be a hater but as someone who looks forward to your videos and I do, I look forward to them every single week and I get so excited for them, I also listen to y'alls podcast every week, I love Aria obviously, getting a 6 minute video after a week feels a bit like a slap in the face. This was very disappointing to say the least. Maybe that's just me but yeah. Now I'm genuinely sad. But whatever. Have a good Xmas break I guess.

    This looks very bland, no onions/garlic and no spice apart from chilli flakes. It's a mixture of vegetables with nothing to tie them together, i'd atleast add some cumin and turmeric, paprika and some tomato paste for extra flavour.

      @@GarudaLegends absolutely not. this one was just a bit too simple, but there are many flavorful & delicious vegan dishes that I crave (and I'm not vegan).
