Well on all areas possible you get vegetables easier I in Vietnam, whilst in Germany we learned to make due with what we have, which is grain out of which all the corn gets produced. Most vegetables have to be imported to here I think

Bread is just sugar which makes you fat & increases risk of diabetes! The ideal diet for most people is meat (with plenty of organ meats for a complete vitamin & mineral profile), seafood, and non-starchy vegetables of all kinds. Pretty close to a traditional Vietnamese diet actually! Starches, cereals, grains, breads, noodles, and even rice are of low nutritional value and should only be eaten in moderation if at all 😢
My wife once bought a whole chicken. Once we got it home, we found out that it still had the head. She was so happy. We think the butcher left it by mistake but still she was hopeful when she bought the same whole chicken on the next grocery shopping trip. It did not have the head anymore. She was very disappointed.
What does she do with the head. I'm Chinese and my mum just throws it out. She does like the neck. I tried it recently and it does it have nice flesh, just not much.

And we have to get the whole rooster/hen at the Asian market though, here in America. American market's whole chicken doesn't have the head or feet...the neck is a maybe, but it is usually cut off and stuffed inside the chicken if it is included.
In Asia, EVERY part of chicken are consumed. Except feather, feses, and blood (blood bcs of religion reasoning, so it's still consumable on some areas). Sadly I never be able to brave myself to eat the other parts (head, neck, innards, and feets). Only the hearts

Even Americans lol our regular grocery stores have so much choice for everything. Then if you go to a fancy store, it's even better selection and quality. Although much too expensive for a lot. Where I live in the southeast USA there's a business called "the produce box" and basically you get a box of fresh local produce delivered to your house every week for roughly $30. They usually have about 5 boxes to choose from or you can make your own combination. There are organic or conventional options as well. It's much cheaper and more convenient than the local farmers market. About the same price as regular grocery store produce, but so much tastier.
I think they grind the bones and organs into the chopped chicken products like chicken sausages. The code word in Europe is "mechanically filleted", in the US it's "process meat". Also, the bread slicing in store is only if baked in the store too. Otherwise it's sliced at the industrial bakery or at home.
I'm a native German. Born, raised and based in the Vaterland. And as a meat-enthusiast, I'm disgusted by the narrowness of our meat-selection. We can barely get marrow-bones. We can't find cow tongues and cheeks at the supermarket. There are no chicken necks, feet and other scraps for broths. And our selection of organ-meat isn't very big either. And we don't have even half the variety of steak cuts, the Americans have. It is terrible. Whenever we want the _really_ good stuff, we need to do either a special request at the butchery, or hope that it's available on Click and Grill. At least we've got great sausages. _That's where they put all of the good-goods into after all._

Most grocery stores actually do sell bones (not chicken though) for broth, as well as seperate innards like chicken hearts, swine intestines, etc. They are usually on the lower shelves though and a bit harder to find and quite a few native German speakers might not even know what the labels mean :) As for greens - if you want variety and freshness, go to the farmer's market, not grocery stores. They are less convenient since they usually only happen once or twice a week and only during the morning, but you can get a ton of different locally grown vegetables there for reasonable prices. Not necessarily everything you might want for Vietnamese recipes, sure, but lots of other stuff that isn't common there instead ;)
I visit the Vietnamese, Russian, Turkish or Middle Eastern supermarkets near me to buy offal, bones and "the rest of the chicken" but it's true sometimes there is a few things in the supermarket too, like liver and hearts, and some more common bones for broth. Also true about the market stands though it will never beat a huge daily market hall (not a fancy hipster one like the few left in Berlin at least)

Early spring is a wild nettle time and some other early wild greens. Additionally I try to grow other greens too, but never succeeded like these two groups. Some just hate the long summer days and short nights (and my erratic watering).
You need to go to the budger if you want the whole chicken. Its not good buying chicken at the Supermarkt anyways, it's full of hormons, Antibiotics and you have a 100% Chance the animal has suffered a shitty life before being killed.

Aaaand industrialised bread needs a lot of gluten in it to get a good constistence... Good bakers can adjust the resting time and the water... You will get amazing bread with half as much Gluten and more intense taste.
@@zperdek also use a very sharp bread knife and let the knife do the work not your hands. People push down to hard squashing the bread. While cutting apply *_VERY_* gentle pressure downward. If your knife is sharp enough it will make a smooth cut. Edit: I've heard to warm the knife as well but have never tried it.
Do all the bread slicer machines in Germany cut out that way? One at a time? I’m shocked our ones in Australia are more efficient - does the whole loaf at once on either thin or thick setting - not as satisfying though.
Make your dream come true. Why not learn a bit of German while saving a bit and move to Germany in order to live and work here? We always need handy and clever folks :-) Besides tons of bread we have at least 20 days of paid vacation per year by law (mostly more, 26 to 30 are common) and they are NOT meant to be used for sickdays (unheard of in Germany. We have "sick days" officially prescribed by the doctor). If we get sick during vacation those vacation days get actually refunded to be used later. Uh sorry I digressed. :-)

Aaaand industrialised bread needs a lot of gluten in it to get a good constistence... Good bakers can adjust the resting time and the water... You will get amazing bread with half as much Gluten and more intense taste.

@@zperdek also use a very sharp bread knife and let the knife do the work not your hands. People push down to hard squashing the bread. While cutting apply *_VERY_* gentle pressure downward. If your knife is sharp enough it will make a smooth cut.
Edit: I've heard to warm the knife as well but have never tried it.
Do all the bread slicer machines in Germany cut out that way? One at a time? I’m shocked our ones in Australia are more efficient - does the whole loaf at once on either thin or thick setting - not as satisfying though.

Make your dream come true. Why not learn a bit of German while saving a bit and move to Germany in order to live and work here? We always need handy and clever folks :-) Besides tons of bread we have at least 20 days of paid vacation per year by law (mostly more, 26 to 30 are common) and they are NOT meant to be used for sickdays (unheard of in Germany. We have "sick days" officially prescribed by the doctor). If we get sick during vacation those vacation days get actually refunded to be used later. Uh sorry I digressed. :-)

@@be6715 There are relatively new. Only a couple of years ago (less than 10) supermarkets started to sell "fresh" bread and introduced them. You could get sliced bread in bakeries though. Also many germans do have bread slicers at home.
They do have them. But the bakery worker does it for you. You just have to ask

I still remember
I went to a Vietnamese supermarket many years ago in southern California. Walking around the supermarket listening to, I guess traditional Vietnamese songs? I notice black family, mom, dad, and a toddler sitting in a shopping cart. And I noticed, the toddlers head bobbing up and down along with the Vietnamese song, like rocking with the music. That was memorable. Lol
