I removed about 800 square feet today so there are many things to correct the way he does it

You need to use the thinset blade in a much more upright position. More like ten or 15 degrees from the vertical. It will take it right down to the concrete in one slow pass

You hold the handle to the side of the drill/ hammer at a 90 degree for more control.
