  • This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April. For our first video from Chicago, we have cats, coffee and comedy with Chicago improviser Joshua Phillips.
    We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
    As we are frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
    In this video, Joshua brews a Colombian Sidra from Dak Coffee Roasters, also known as Grenadine. This advanced fermentation natural was rested for 1 month before being brewed in a Japanese ice coffee style. Joshua used a very coarse grind on an Ode Gen 2 grinder from Fellow, paired with a Ceramic April Brewer and April Paper filters. He heated Brita filtered tap water using a Fellow Electric Gooseneck kettle, pouring 175g of water using 2 pours. This was combined with an 18g dry dose, and 75g of ice in the server to produce the final beverage.

    Drinking heavily processed coffees on ice such a gamechanger, I recently had my first co ferment from DAK, the Melondo which is co fermented with watermelon, and really enjoyed it as a normal filter. Then I tried it as a cold brew at my local café and was blown away, it's like having ice cold liquid watermelon. Nothing I'd want to drink daily, but certainly fun to share with friends that aren't into coffee themselves.
    I'll also be weighing the water I rinse with from now on, never thought about it before but it seems obvious that that'll affect consistency too. Thanks for this home brewing series, it's cool to see different people brew and hearing their stories aswell!

      Thank you for sharing and watching. Weighing the amount of water you use to rinse the paper filter is a classic "competition approach" and will definitely improve consistency.

    I loved the water talk. I've gone deep down the rabbit hole of water and found that getting super fussy about it is just not worth the hassle for me personally. Based on the water situation where I live, I just use filtered tap and cut it with distilled. Easy peasy. The most nerdy I get is I'll test the hardness/alkalinity a few times a year with the change of season to see how much I should dilute.

      Still sounds pretty nerdy! But agreed, water is only one part of the puzzle. And there is always a "best" cup for each style of water.

    I’ve actually never tried this brew method, but will definitely give it a try today. It shows that ( in life and coffee ) it’s important to be open to new experiences, because we learn and expand our taste palette. Thanks again April for bringing us this brewing at home coffee series. )

    Really amazing episode. Though I do wish you had tried a standard hot brew of April coffee with that extremely coarse grind size as well. Great episode!

    This is also how I make my iced coffee these days, the only difference is I try to use as little ice as possible, and use a lot of whiskey balls as well.

    I do this with heavily processed coffees as well. I already know from this video that you won’t approve, but I will do a Kyoto style iced cold brew with them sometimes and I’ve always likened it to a cocktail experience so this video hits on that.

      @@coffeewithaprilof course although since it’s a cold brew not the most exact science necessary I’ve found but I typically aim for a 1:10 ratio and I will usually do it in a V60 03 (they do make dedicated vessels for this sort of thing but I have too much gear as it is). Standard grind size that I will use for a hot coffee. It’s fun to do when you’re at the end of a bag especially with loud coffees that you feel you ‘get’ already.
