Same here. My brisket is significantly smaller than yours, but there are only 2 of us so I still have a ton of leftovers that I didn't quite know what to do with. This has solved my dilemma as well.
@@summersands8105 make fried rice with some of it! Bonus points if you have some beef tallow from it to use when frying the rice. That's one of my fav ways to use leftover brisket. I shamelessly stole the idea from Blood Bros BBQ in Houston lol

My wife and I made smoked chicken enchiladas once, and it was absolutely fan-taste-ic! The smoke adds so much to the dish, and it’s awesome. I’m ready to try this next time we do a brisket.
Bradley, I, too, have considered a chili burrito. It contains everything you need (chili, sour cream, cheese, etc.) and it's in a convenient food delivery device. You must do a video on this.
My favorite way to finish enchiladas is to finely dice and rinse red or white onions in ice water, finely dice some jalapeno or cerano pepper, and mix that with lime juice and fresh cilantro. It makes an extremely sharp and bright topping that cuts through the rich, soft, earthy flavors of the enchiladas and gives a freshness and crunch that perfectly completes the texture.
Definitely need to make smoked chicken enchiladas but with a cheesy cream based sauce. I got the idea from Sam the Cooking guy years ago and have changed some of it to make it how I like it. I bet with you making each part of the enchilada by hand, you could knock it outta the park!!
I watched the Chud Chat yesterday, so my days are off. Saw this video pop up and thought, "A Wednesday Chud's video?!?!" Then I realized its Tuesday... Looks delicious though. Making chopped brisket sliders tonight to use up some brisket from the freezer.

Great vid, thanks Brad! Highly recommend pulled pork enchiladas with Hatch green chile sauce, it's a household favorite of ours (and is a perfect way to use up the inevitable leftovers that you have after smoking a couple of shoulders).
Not sure what you should 'enchilada' next, but you should try some pulled pork tamales...maybe even some brisket tamales, or smoked chicken tamales. Basically anything tamale.

One small heads up - onions and garlic are poisonous to dogs. It was a small amount so likely not a big deal, just sharing. Love your videos, keep up the great work
it's been my experience that, if you're going to use home made corn tortillas, you have to make them in advance and let them sit in the fridge for a day or two. when you get ready to put it all together, just get them up to room temp. fresh, just-made tortillas will pretty much disintegrate every time.

I do chicken enchiladas a lot with my drum. I smoke my veggies for my sauce then smoke a whole chicken. Always a huge hit.

Tex-mex enchilada's it's chilli in a can ground beef and a lot on Mexican mix cheese on top so amazing my mom made this since before I was born

I've never smoked a brisket just to make enchiladas. Lol. But, it's one of my favorite things to make with leftover brisket, chuck or pulled pork.

What is the heat source for the pan? Does he just pull it off the smoker and it retains enough heat to cook the onions?
