How to make Nasi Lemak - Malaysian Food

  • This is one of the most popular dishes eaten in Malaysia, they call it their National dish - Nasi Lemak. Which is coconut steamed rice eaten with a spicy sambal, egg, cucumber, peanuts and ikan bilis. It's also had with a rendang curry or fried chicken. I would have this for breakfast when back in Malaysia but you can get hold of it anytime of day!

    Coconut Rice:
    Ingredients:
    • 2 cups of long grain white rice, washed
    • 2 pandan leaves - or I used 2 stalks crushed lemon grass
    • Ginger about 1 inch, sliced.
    • A little pinch of fenugreek-
    • ½ cup of coconut milk
    • 2 cups water
    • Pinch salt.
    This is really easy if you have a rice cooker you simply toss all ingredients in and switch onto cook.
    If you have saucepan to cook in, it’s still very simple, Put all ingredients into the pan, bring to the boil then immediately turn heat to it’s lowest setting, put a lid on the pan and leave to cook really gently for 10 - 15 minutes.
    Sambal with Ikan Bilis
    This is a spicy chilli sauce that is served with many dishes in Malaysia, but it goes especially well with Nasi lemak. You can make a big batch and store it for a long time in the fridge.
    Ingredients:
    • 15 dried long red chillies
    • 5 shallots (or 2 brown onions)
    • 5 cloves garlic
    • 1 stalk lemon grass (optional)
    • 5 tsp brown sugar
    • ¾ cup tamarind juice
    • 1 cup water
    • ½ cup dried small anchovies (ikan bilis)
    Method:
    Soak chillies in water for 30 minutes before using.
    Blend the soaked chillies, shallots and garlic in a food processor until smooth. Heat 2 tbsp of oil in a pan and fry the paste for 10 - 15 minutes, until it has reached a dark red color.
    Add the sugar, ikan bilis and water and leave to simmer gently for 30 minutes. Make sure you keep an eye on it and add a little more water if it looks like it’s too dry and might burn.
    Stir in the tamarind juice and a squeeze of lime juice for extra flavor at the end.
    This will keep for 1 month in the fridge.
    To finish off the nasi lemak, serve the coconut rice with the sambal, a boiled egg, some roasted peanuts and small dried anchovies and a slice of cucumber. A wonderful meal.

    hi friend i have on question for your: this April i was in KL for family visit i travel from KL to Cameron and on the highway i eat this white rise and i noticed that there was a very very very very tasty small dried fish was inside the rice can you please give me its name and details....thanks

    Please fried the peanut and also the ikan bilis.if not taste weird.Malaysian cook nasi lemak never unfried both things.

    Great recipe, but I thought nasi lemak has chicken in it with some kind of sauce? That's how I had it in Malaysia. I love nasi lemak though so many new flavors going on.

      Omer Choudhry Hello ! the complete nasi lemak usually consists of the rice (coconut milk rice) , sambal , fried anchovies , fried peanuts , cucumber , hard boiled egg . You can replace the boiled egg with sunny side up egg too . Other than that , you can have it with fried chicken , beef rendang and chicken rendang . i thinj you are talking about Chicken Rendang it's one of the most common dish for nasi lemak !!!

      well, basically belacan is made out of shrimp so maybe you can try using shrimp paste

      bare in mind every weekend 50,000 Singaporean cross border to malaysia just for food

      +Caroline artiss you're welcome! As for the sambal, is there a substitute for that? I'm thinking it might be a little too spicy for me? And is the ikan bilis just the regular dried anchovies? It's cool how Malaysian cooking and Filipino cooking have so much similarities, but I guess it's also due to close proximity of both countries. At any rate, I'm excited to try this recipe!
