Already took the engine out and in the process of taking the body off. You have no idea how jealous I am that your vw is fixed up and ready to drive! Thank you for this video

The shift pattern on your ashtray is for an auto-stick. Your manual has the "H" pattern - 1st top left, 2nd bottom left, 3rd top right, 4th bottom right and reverse push down, then sideways "L" -left and back. You should start in first especially on any kind of grade. Your son did great - definitely a natural!
That's the same ashtray I have in my 74 . I also have a manual 4 speed. Looking at the shift pattern threw me at first until I saw the Auto stick picture
The very first manual shift car I ever drove was a'68 VW Beetle. The lady who owned it agreed to let me practice on it. She was very patient, being a schoolteacher herself.

Ya, I’m guessing the the tray got lost so they put one in that came from a wrecking yard.

The ash tray shift pattern if for semi auto vw bug, clutch less transmission that came out in 1968..

On a hill start you can use the handbrake to hold the car as you pull away them it won't roll backwards.
