Fish and Brewis - Traditional Newfoundland - Bonita's Kitchen

  • Welcome to Bonita's Kitchen! Today we will be making Fish and Brewis, made with salted cod, hard bread and so much more. SEE RECIPE BELOW!

    Ingredients:
    1 lb. ( 454g) salted cod fish ( deboned ) or more
    2 medium onions ( peeled and chopped )
    4 medium potatoes
    1 piece of salt pork or fatty bacon ( ¼ cup)
    2 pieces hard bread
    2 tbsp butter
    Pepper and sea salt to taste
    Prep time: 20 minutes, Cooking time: 30 minutes
    Serving for 4 to 6 people depending on helping.
    Method:
    Soak overnight in separate bowls, salted cod and hard bread.
    In a medium saucepan with water, add pinch of sea salt, then boil potatoes for about 15 minutes, or until fork tender.
    In a frying pan start frying your pieces of fat pork with butter. When your fat pork starts to fry add your chopped onions and continue frying until golden brown. ( Remove some oil from fat pork in a small bowl and sit aside to use later if needed.)
    In another saucepan with water add salted cod boiling for 10 to 15 minutes, do this twice to remove some salt if needed. After cooked remove from saucepan onto a plate to flake apart , removing any bones that may be still there.
    Then when your potatoes have boiled remove them from the pot and scoop into a bowl, in that same water add your hard bread, but drain the water from your hard bread first before adding it to your potato water.
    After the hard bread is WARMED for 5 to15 minutes, drain all the water off and chop bread until ready to use.
    Use boneless salted cod or remove bones when salted cod have cooked, remove from saucepan and flake apart.
    Now, this is when you start to add everything together, chopped or mashed potatoes, flaked fish, chopped hard bread, fried onions and fried fat pork or bacon, add salt and pepper to taste, fold everything together then serve. Keep some fried onions and fat pork to serve with meal.
    Bonita’s Tips:
    Please note your hard bread don't need to be cooked only kept hot.
    Use fatty bacon if you don’t have fat pork.
    Using ice-cream scoop, serve 2 to 3 scoops pre plate, top with reserved onions and fat pork. Reheat in a frying pan or microwave.
    This is just a quick recipe for making fish and Brewis,
    In Newfoundland and Labrador on Christmas Eve, most everyone made this on Christmas Eve.
    This was a old tradition that have been forgotten over our generations, hopefully we can keep it alive by making this dish our house old favourite.

    This is one of my favorite meals. It was something the whole family enjoyed. I know it's not traditional but we would always have some drawn butter with it. Thanks for sharing!

    Thank you Bonita for bringing back happy childhood memories. My sister is named Bonita and I have never seen another Bonita you are a credit to your name.I grew up on this food, I am from Prince Edward Island we ate this but without the brewis, and we are 7 layer dinner yum.

    Thanks for the video Bonita, one of my fav newfie dishes... however, none of my husband's family makes this with potatoes in the mix... potatoes only with fisherman's brewis... and you didn't mention it, so not sure you folks do this, but the majority of his family eat it sprinkled with sugar or drizzled with molasses. Is this not traditional? And of course, some mustard pickles on the side

    Great recipe, but everyone has their own style. We eat everything separate on the plate when first cooked, then combine the leftovers for the next day. Wanting leftovers, I double the salt fish and the hard tack, and boil maybe 6 potatoes. I do fry onions, but also like to have a dish of finely chopped raw onions on the table. As for the scrunchions, I always fry loads, and keep a steady supply refrigerated. Thankfully, some Newfoundland products are available here in Toronto.
    I have subscribed to your channel and liked this video. Now I need to catch up and watch all your videos, though they make me hungry and kind of sad. I miss cod tongues, moose meat and rabbit, and of course wonderful NFLD. Thank you for sharing.

We love our cultural foods and it is wonderful when you can have access to the ingredients that go into each dish so you can make it.     Hi Bonita, this is a great recipe, and I love fisherman's brewis that's what this is, not fish and brewis, which are all separate items and eaten separately on a plate .

      Hi and thank you so much for stopping by and letting us know you enjoyed our recipe of home. It's funny how so many people got a different story of both recipes. My Dad always told us a story as kids this mashed version was fish and brewis and the other way all separate on the plate or served just toss on top of each other and no potatoes was fisherman's brewis. I guess the story being told was when the fisherman was on the water they didn't take a lot of supples with them. So having the hard bread, salted fish and salted pork you didn't need a fridge to keep it from spoiling. But I guess whatever way we remember it they both are pretty tasty and special meals. Haha!!     Just watched & got hungry, on 2nd day of my diet! Rats! I have never heard of adding potatoes to Fish & Brewis. I know some people put fried onions in or on the side but my family never did, I guess everyone has a twist!

My dad would make it this way and sometimes he would not mix it together and have fishermens Brewis and have everything separate on his plate. All the best with your diet January is the worst month for starting because you are coming off Christmas and there is still so much left overs to eat. Enjoy Bonita

      I am committed to this "change of eating" for 2-3 weeks, after having eaten all the left-overs in my house & leaving homemade chocolate/Heath candy @ my daughter's. I've heard some make Fish and Brewis with fresh cod - that would be interesting to try! Love to watch you cook tho., no calories in watching, just drool!

    Thank you! To find Salt Cod out West or other places - you can call around Portuguese or Italian stores, as they also eat it (they both call it "baccala")

      OS M Hi and thank you for your message and for visiting my channel, any salted white fish would do great. The reason why they would salt there cod or fish is for storing it for long periods of time, or to last all winter when cod or white fish wasn't available. But I'm thinking that type of fish would work great. This is a lovely recipe and very delicious. Enjoy Bonita

      Bonita's Kitchen Thank you Bonita! I grew up with Newfie food in Vancouver and we always found salt cod here, but generally only in these Portuguese or Italian stores. However I've seen it at Superstore too. It has a unique taste and texture that I crave especially around Christmas/ New Years.

      I got salt cod and made it today! Yum! Made too much brewis though...overestimated the amount....any tips for 2 cups of leftover brewis?

    Sounds lovely. When we were visiting Newfoundland many years ago, I had a taste of a dish that was like this but more like Poridge consistancy. We did not get any thing to go with it. I have been looking for the recipe for years to make it. I am glad I found you. How ever, Where can I get the hard bread? Can you help? Also what is is Brewis?

Brewis is your hard bread that is soaked and warmed in hot water and served with the salted cod fish, onions and fried fat pork. I hope this helps you make this meal at home.     I can't find fat pork for scrunchions! Is bacon a good alternative? I love your channel!

If you like bacon and can't find fat pork that will work ok but not taste the same, ask your local grocery meat dept personal if they have access to fat pork, maybe they can make some for you or order some in, its worth a try.       I can get Hormel Salt Pork here in Michigan. I keep a chunk of it in my freezer to use for "hash" or Baked Beans. I can even get the salt cod from my Lebanese grocer but not hard bread. Thankfully I have stockpiled pounds of it over the years going back & forth to NL

      Sandra Miltich hard bread is easy to make I made it a few days ago. It’s just flour and water and salt, you can find many recipes on UA-cam for exact measurements. I used two cups of flour to one cup of water and a teaspoon of salt. You just roll it out and cut it into shapes you like, I used a cookie cutter, I bake it at around 200 F for 30 min on each side, then you leave them out to dry for a few days before packing them up

      Good question!! I always use butter frying it to stop the fatpork from smoking up or burning before it's nice and crunchy. The butter just helps kick up that taste too.     Originally from Trinity Bay, living in NS, and I heard of people using onions in their fish and brewis, but never tried it meself. Does it add a good flavour to it? Is it overpowering da brewis? I love onions and fish and brewis but I never wanted to ruin a good t'ing. Haha! Had a feed of it a few weeks ago. Love your channel and cooking.

    Bonita, I can remember my grandmother cooking fish and brews but I cannot remember her ever adding potatoes. Is adding potatoes something that just a few do?

      Yes you can freeze your left overs but only for a short time because you don't want in to get freezer burn. You can have it without potatoes if you wish, but the potatoes is so good with it. :) Enjoy Bonita

    Bonnie ... This is not fish and brewis. ... This is fisherman's brews, as fish and brewis is not mashed. ... Looks good but never ever sawit done with an ice cream scoop...

      Hi Loretta: Thank you for your message and for visiting our channel, I appreciate your comment. When I was a child this was the way my dad would make this meal, sometimes have it all separate with the scunchions and sometime makes it and scooped it out with a ice cream scoop. He also would have the plate of salt fish with a side of potato and boiled brewis, then called it fishermans brewis. We lived in a fishing community but my dad was a farmer, our friend from pools cove said he dad would have fishermans brewis cooked out side by the salt water and put on a rock. So no matter how you serve it or scoop it up it all got the same ingredients, salt fish, hard bread ( brewis ) and fat pork ( scunchions ) and a side of potatoes. So if it's not the way you cook it but I'm glad you enjoyed this recipe and stopped by. Have a lovely day.....Bonita

      Loretta, I make fishermen's Brewis quite often, it's mashed with a masher, to blend it all together. What Bonita did, was just blend it with a fork, but what ever way it's done, it's really good.I grew up with this meal, but just had my potatoes on the side. Bonita is doing a great videos.
