Quick Plantain Cookies For Breakfast Vegan & Gluten Free! Great For Kids!

  • In a blender:
    1 plantain
    ⅓ cup peanuts
    ⅓ cup almonds
    ¼ cup sugar
    ⅓ cup water
    Blend, then pour into a bowl
    Continue to add:
    ⅓ cup tahini
    1 cup thick cut oats
    1 cup quick oats
    Mix and place on the tray using a spoon 🥄
    Optional:
    On the other half I added
    ½ cup shredded coconut
    Mix and place on tray using a spoon
    At 350F bake for 20 minutes
