  • This is my version of the popular Royal Bibingka rice cake in Vigan, Ilocos Sur. It's made out of glutinous rice flour, coconut milk, milk, and sugar. I added macapuno that makes this recipe different from the traditional one. This is usually serve during Christmas or special occasion.
    Ingredients:
    use 30x40 baking tray
    pre-heat the oven to 180C
    bake for about 35-40 mins.
    3 1/2 cups glutinous rice flour
    2 1/2 cups coconut milk
    1/2 cup brown sugar
    1/4 cup condensed milk
    1/2 cup evaporated milk
    1/2 cup sweetened macapuno
    For the topping:
    1/2 cup coconut milk
    1/3 cup condensed milk
