INGREDIENTS
4 cups sweet rice washed and drained
1 cup brown sugar
2 cans coconut milk 400mL
4 cups water
Latik Syrup
2 cans coconut milk 400mL
1 cup brown sugar
INSTRUCTIONS
1. In a large pot, wash and drain the rice. Add brown sugar, coconut milk, and water then stir.
2. Bring to a boil then simmer. Stir and cook until all liquids are absorbed.
3. In a separate pan, combine the coconut milk and brown sugar. Cook until the liquid thickens and caramelized.
4. Transfer the rice into the baking pan. Pour the latik syrup on top of the rice, spread evenly. Bake in a preheated oven at 350°F for 25 minutes.
5. Remove from oven when it is done. Let it cool down before serving.

Can biko be made with sweet brown rice? If so, how? When I made it, the brown rice grains were hard and had to discard.
To answer your question, yes, biko can definitely be made with sweet brown rice! In fact, using brown rice instead of the traditional glutinous white rice adds a healthier twist to this already delicious treat. But before we dive into the process of making it, let me first explain why your previous attempt at making biko with brown rice may have resulted in hard grains.
Brown rice consists of whole grain kernel or "unrefined" variety of rice that still contains its nutrient-rich bran layer. This is what gives it its distinct nutty flavor and chewier texture compared to white rice which has been stripped off its bran layer during processing. Because of this difference in their composition, brown rice takes longer to cook than white rice.
Now onto the fun part - how to make biko with sweet brown rice! Here's my tried-and-tested recipe for a perfectly cooked and deliciously sweet biko:
Ingredients:
2 cups sweet brown rice
2 cups coconut milk
1 cup water
1 cup dark muscovado sugar (or any type of dark brown sugar)
1 tsp salt
Grated coconut for topping (optional)
Instructions:
Rinse the sweet brown rice under running water until water runs clear.
Soak the rinsed grains in water for at least an hour or overnight.
In a heavy-bottomed pot or saucepan, combine soaked drained grains with coconut milk, water, sugar, and salt.
Stir mixture continuously until sugar is completely dissolved over medium heat.
Lower heat once mixture starts boiling then cover pot/saucepan partially leaving about an inch opening.
Let it simmer for about 45 minutes to an hour, stirring occasionally to prevent rice from sticking at the bottom of the pot and burning.
Once the liquid has been fully absorbed and rice is tender, turn off heat and let biko cool down a bit.

Yung iba naman na napanood ko…..isinasaing muna ang malagkit….tapos saka ibubuhos ang gata…. ( kakang-gata at yung segundang katas)
tapos saka isasama ang brown sugar…l.At tuluy-tuloy ang paghalo hanggang sa eksaktong “ lagkit ng malagkit” …then….isasalin sa
aluminum tray-pan o kaya sa hulmahang tray….saka ibubuhos ang pinalapot na pang-ibabaw sa biko…..puedeng i-oven para mas lagkitan at
dark brown ang pang-ibabaw sa biko…o puede ring hindi na i-oven pa….

Wow sarap... kaso d appropriate ung mga utensils na ginamit mo ate.. spoon is not for stirring sa pot... spoon is not propper usage to flatten food on a tray.. and ung kitchen turner not appropriate for stirring a sauce or any liquid mixture na nakasalang sa apoy. :) peace po. Sosyal kasi ng oven and ng pot na gamit nyo and im sure maganda ung kitchen but inappropriate lang ung mga nasabi kong utensils. Salamat po

Making this rn. Despite having the recipe I still messed up the measurements 😭 hopefully my rice still turns OK. I'm using slow cooker for the rice. So I'm not sure if it'll works well.

At first, the rice is not fully cook , but it was fine after i bake it. The taste is good though. But mine didnt look brown color. Maybe because i used light brown sugar?
