Also watch the legs as, while standing up, people don't tend to cross them if they feel unsafe or uneasy. Also, as you mentioned, more open body language can help bolster your confidence immediate and said posture generally correlates to comfort. Also keep in mind other factors on a person's body language (e.g. weather, clothing, environment, etc.).
