Many Trinis have Grenadian parents and Grandparents who know how to make the dish the traditional way, with that being said not all Trinis will make it the traditional way, they will add their own style. It's like a chef that adds their own spin on any dish, it doesn't take away from the tradition at all. As a cook I can really appreciate this lady's authentic dish, but I can also appreciate someone else's take on it, that's what cooking and enjoying food is all about. If you eat other meats try to use smoked turkey neck bones or legs. It taste similar to pork. I also don’t eat pork and I use this as a substitute when I make oildown.

Does the coconut milk turn to oil and that's why it's called that? I have Jamaican roots and I don't think we have anything like this. I definitely wanna try it.

And yes it is cooked on low heat in order to allow everything to cook properly. and sometimes if it cooks to long yes it can start making oil to the bottom ., the average cooking time would be one hour. after the coconut milk cooks down the coconut oil is left. Everything in the bot is then coated with the residual coconut oil.
