Nah, Dodie just didn't make the best tablet. 118-120 is a better temperature to aim for and of course let it set, looks like Dodie maybe needed to make this video and his is still warm.
My dear Mum used to make this when I was a child, I didn't realise the quantity of sugar etc that was incorporated into the recipe, it tasted lovely though and very occassionaly if I see it for sale I'll have a wee treat but it never tastes the same as Mum's.

That's not the tablet I'm used to - the stuff I have is much harder and crumblier. Have I been lied to? Have I been having shit tablet?

i think the longer you simmer at the end for and the colour, denotes the hardness n crumbleness
