I made a good meal. First time I tried to use cauli rice. I made a cheese sauce, steamed frozen broccoli for 3 min. Cut it up. I put the cheese sauce , cooked shredded chkn , broccoli onion diced, cauli rice , seasoning. In a small casserole. 2 serving size. I live alone, I don’t need a big casserole. But baked it . Was so delicious.

You should shred your chicken by using a mixer it’s a game changer!
Yes I usually do! But it broke and I hadn’t ordered a new one. Just got one though! 🥰

Probably too late to be noticed but one can shred cooked chicken using a hand or stand mixer, or pulse a food processor.
For sure! That’s why I mentioned that I had one but my kids broke it 🤪 I ended up getting a new one though
TIP: To shred chicken quickly, put it in a stand mixer and let it go to town, or use a hand mixer.
Yes I usually do that but my kids broke mine! 🤪 I actually got another one and some individual chicken shredders! 😊

Instead of boiling the chicken I do this in a slow cooker. The chicken is much tastier

I've started Keto but I'm concerned about my cholesterol. Has anyone had elevated cholesterol while on keto.Any tips ?
I personally have always had great numbers! Especially on Keto. But my advice would be to talk to your Dr about it just to be sure as everyone is different
