Easy Rhubarb Muffins! Seasonal baking 🧡

💛Ingredients (14-15 muffins)
Streusel topping:
30 g all-purpose flour
30 g sugar
25 g butter (room temp)
Batter:
260- 280 g rhubarb (peeled)
2 large eggs (room temp)
350 ml milk (room temp)
100 g melted butter (room temp)
180 g sugar
1/2 tbsp vanilla sugar (or 1 tsp vanilla extract)
good pinch of salt
390-410 g all-purpose flour (please, follow the consistency shown in the video)
10 g (2 tsp baking powder)
3 g baking soda (1/2 tsp)
Bake in a preheated oven at 175°C/350°F for about 23-25 min
