How to Make a Greek- Mex Bowl!!

  • OHHH Boy you wanna talk flavor!! This bowl has it all!! I love fusing different cultures together because in food we really share a lot of the same spices and flavors and this Greek-Mex Bowl proves that! This recipe is enough for 2 to 3 people.
    Make it vegan by eliminating the chicken and yogurt sauce!
    Here's what you need for Greek part:
    15.5oz can of garbonzo beans drained and rinsed
    1/4 cup of Feta Cheese
    1/2 of a English cucumber diced
    1/2 tsp dried oregano
    2 tsp roasted garlic powder
    1/4 tsp cinnamon
    1/2 tsp dries basil
    1/2 tsp dried dill
    1/2 tsp dried rosemary
    1/2 tsp dried thyme
    1/2 tsp dried parsley
    healthy pinch of salt
    healthy pinch of pepper
    1 tsp of olive oil
    Directions:
    mix in with the garbanzo beans the olive oil and all the seasonings and toss together until everything is seasoned, then add the feta cheese and cucumbers and mix well.
    Here's what you need for the Black Bean part:
    1 15.5oz can of black beans drained and rinsed
    1 14.5oz can of fire roasted corn drained only
    1/2 pint grape tomatoes diced
    1/2 of an avocado diced
    healthy pinch of salt
    healthy pinch of pepper
    1 tsp of cumin
    2 tsp of paprika
    2 tsp dried cilantro
    2 tsp garlic powder
    Directions:
    combine all ingredients and toss together well
    What you need for the Chipotle Greek Yogurt Sauce:
    3 chipotle peppers out of a 7oz can in adobo sauce
    1 head of fresh roasted garlic
    2 tbsp of white wine vinegar
    1/2 of an English cucumber diced with no seeds
    4 basil leaves chopped
    healthy pinch of salt
    healthy pinch of pepper
    1 cup of Plain Greek Yogurt
    Directions:
    add all ingredients to a blender and puree
    Here's what you need for the chicken skewers:
    6 wooden skewers soaked in water for at least and hour
    6 chicken strips
    healthy pinch of salt
    healthy pinch of pepper
    1 tsp of roasted garlic powder
    1 tsp of paprika
    1/2 tsp oregano
    1/2 tsp cumin
    1/2 tsp rosemary
    1/2 tsp thyme
    1/4 tsp cinnamon
    Directions:
    season both sides of chicken tenders
    insert skewers and cook on medium high heat on an oiled cast iron grill pan until internal temp reaches 165 degrees fahrenheit or on the grill to same temp.
    For the rice I used Royal Yellow Rice and cook as directed on package.
    Plate it all up in a big dish and let everyone dig in!!
