what temp setting is the replacement eco switch you used, and is it appears to be surface mounted .I replace mine with a 240 degree, it trips once combustion door is hot, is there alternative placement?
I don't recall - I had some issues with a surface mounted sensor high limit switch tripping when connected to the burner assembly had to move it slightly away but close enough to be affective if the combustion chamber heat was an issue. Thanks for watching
Correct, it helps you diagnose whether the thermal switch is bad. You can also check it for continuity with the multimeter and a pinch. It’ll get the water heater running, but it is a safety device so I don’t recommend running it for a long time without the thermal switch just for safety, the likelihood of anything catastrophic happening is pretty low, but still better to have it and not need it , then need it and not have it.
@thewaterheaterfactory thank you much I'll give it a try to help me figure it out. Already replaced the thermocouple assembly with no luck can't figure out why my pilot light won't stay lit. Hopefully this'll get it figured out

What would make the water heater over heat
Is the the paper clip trick where you replace the switch with a paperclip and bridge the wire?

Question whats the resistance on the thermoswitch u bought to replace?
Resistance is zero , it’s open or closed the cut off switch
