It's one of the little elements that really adds to Chie's romance, and I think it was maybe expanded upon in the Golden version of Persona 4; she's really very insecure about her feminity, and there's a fair bit of self-doubt there. It just makes it more satisfying as you peel those doubts away by building up a strong romantic relationship with it, in my opinion.

For lore on the “how about you?” option, in persona 4 right before you start her social link Chie states that Yosuke is cool but Narukami is somebody she feels like she could rely on, so when she says somebody “reliable” she’s pretty much telling Narukami she could see herself marrying him.
