A friend of mine always brings some of this curry paste back from Thailand and I want to try and make it myself because it’s so fragrant, do you know what types of herbs/spices/seeds they use in this type of paste? I already know that it’s probably mostly chilies, galangal, lemongrass, turmeric and probably kaffir lime skin, but do you have any knowledge of what else goes in there to make it so fragrant?
Hi @MyManDan. You pretty much named most of the aromatic herbs/ingredients that make it so fragrant. Fresh garlic and shallots is also used. Sometimes, depending on the type of curry, fresh whole peppers, cardamom, cumin and cilantro roots and seeds, which give it a nice fragrance, are pounded in a mortar and pestle. There is a lot of variations of Thai curries (North, South, etc). Some have fish, shrimp paste. I hope that helps. Thanks for watching!
