I Heart Umami Have you ever considered using grass-fed beef heart instead of other muscle meat cuts? It has a different nutrient profile and it certainly goes along with the idea of paleo or ancestral eating.
Hi there! Thank you. Love the question! I love organ meats but it's important to find really good quality ones. I especially love offal, beef tongue, and the tendons! I haven't tried beef heart yet but I bet it's delicious! I think my favorite way of making them will be slow simmering ...just like the Taiwanese/Chinese beef shank stew!
