All forms of sugar, sucrose and fructose, turn to glucose in the body; fruits, refined sugar, turbinado sugar, honey, maple syrup, agave, etc. I also usually replace the eggs with flax seed and/or chia seeds. Great recipe! I didn't have a loaf pan so I subbed it for 12 muffins. And to make it fruit-sweetened I made a paste consisting of 10 dates and 1/4 + 2 tablespoons of milk. It baked for about half the time a loaf would bake for and turned out great! thankyou so much for this amazing recipe.

There are many recipes of pumpkin bread but I like your healthy version! Great idea to use oat flour instead of all- purpose flour! I like butternut squash puree you used instead of pumpkin, how smart it is, never thought about it! The bread looks so delicious and moist! Definitely gonna try it soon!🎃😋
Love this recipe...tried them as muffins - doubled the recipe and was able to get a dozen. Had some batter left over, so I added a half cup of melted peanut butter and made some cookies. I got 10 cookies, and they turned out very nicely!! (PS, I used your homemade date pate as sweetener, which I highly recommend!)

Instead of baking the pumpkin for an hour u can just cut into wedges without the peel, cover and microwave for 10mins (flip after 5mins) until fork tender. Then blend :)
Some cooks bake the pumpkin because it deepens the caramelized flavor-kind of like comparing a baked sweet potato to a boiled one. Microwaving is a good holiday timesaver though.
Made this. Definitely tastes healthier and heavier than fluffy pumpkin breads. I needed to double the dark chocolate chip amount ( yes needed😏) and I still didn’t feel guilty eating it at breakfast.

You could use almond flour, he loves oats a lot so he uses it in alll his recipes
But u can simply swap with almond flour or wheat flour

I found that 2 cups rolled oats = 1.5 cups ground. Your mileage may vary, of course.
