Ok so the extract goes in with the melted chocolate. And yes in the mac video there are actually 2 types of sugar used. The white granular sugar goes into the egg whites and the powdered sugar or "icing sugar" goes into the almond flour mixture. Enjoy! :)

I just made these for my family. They came out great and were so easy to make. We served them with ice cream. They were an absolute hit with my brother and my mom.
So I've made these brownies many times and they are definitely amazing and one of my favorites. But I always call them the "finicky" brownies because I've gotten such variable results! I think if you use ghiradelli chocolate, have Beth's pan, and Beth's oven, you'll get them right 100% of the time! But even meticulously following the steps, even after having baked them successfully several times, I occasionally have failed (waaaay too gooey and fall apart) batches now and then. What I have learned: 1. The 90g flour amount should actually be around 105g. This is what I get if I weigh 3/4 cup of flour the way Beth does. 90g is always too gooey. 2. Your unique oven temp will affect baking time. I have to bake them for 12.5 mins in my oven otherwise they are gooey. I suggest making a half batch first if you've never made them to test your oven. If you do a half batch: 3. Use a 9"*13"*1" pan for half batch. If your brownie batter does not fill up the entire area of a 1" tall pan, your baking time will be affected. A layer deeper than 1" will need to bake longer. So the original recipe works fine in a 11"*16"*1" pan, but it has to be those dimensions! Other tricks I do is to beat the eggs and sugar to ribbony stage to make sure the brownies have more structure after baking. Takes about 3-4 mins of beating on med to high speed. I also bang the pan on the ground immediately after baking to make them denser again to make up for beating the eggs for so long.
Recently made this recipe and it was amazing. I used a 9x13 pan so the baking time changed. I baked the brownies for 15 mins then left it in the fridge for 24 hours. This recipe is highly recommended. Thanks Beth =]
THESE BROWNIES ARE AMAZING! I made them yesterday and they were so popular. These are so soft and fudgy that you almost don't even need to bite them! Haha! Good questions! It actually comes down to the type of cooktop you have. If you have a gas cook top, it's ok to use a saucepan on a low constant flame. Just put the butter in first and the chocolate on top, as the butter will coat the pan and prevent the chocolate from burning. BUT if you have an electric cooktop (where the heat is harder to control) I would reco a double boiler or makeshift double boiler. :) The heat from the hot water provides a gentler heat for melting chocolate. Enjoy!

Beth!!! I made these for a surpise for my husband for Valentine's Day!!! They were yummy I used a 9×13 baking sheet and adjusted the baking for 15 mins and they were devine!!! Ah yes that's a great idea! :) Fun concept for a video. Too salty, I've found you can add potato (if it's a soup) to lessen the salt or lemon juice if it's a sauce, or milk for a creamy sauce works too.

Oh yum! Love the addition of nuts :) Yes the baking soda will make them cakey :) But you can also pop them in the fridge overnight and that will make a cakey brownie chewier :)

Oh yes of course! I have found the best flour for baking are the rice flours or the garbanzo bean flours (or just regular "Gluten Free" flour will also work) just stay away from almond flour, that's a bit too grainy. Enjoy!

Just made this but with a much deeper baking tray... Added a few extra minutes on the oven but still came out runny. Nope no need to adjust either :) To mix in, you can either add them into the batter as the very last step, or my preferred way is to pour the batter in the pan, smooth it all out, then sprinkle the nuts on top. I love to add chopped hazelnuts, or almonds or walnuts or pecans, all great choices! But the combo of the hazelnuts and chocolate mimics the flavor of "Nutella" and is really good! :)
Thanks Beth for a very informative video. I have developed my own brownie recipe after numerous attempts. The hardest part to get right for me was the cooking time. I found that the ideal was 320F for 40 mins, since it gives the brownies a nice chewiness that I wasn't able to get with shorter bake times on higher heats. 375F for 10 mins really makes sense though. I will give it a try the next time I decide to indulge on brownies! ;)

Aw you bet! Yes depending upn the depth of your pan, you will need a longer cooking time. If a toothpick comes out "sticky" that's OK but running you should let bake a few mins longer :)

Yes make sure you used real butter, not margarine or any other butter sub. And also be sure you are using real AP flour (not pastry flour) if all else fails just allow them to bake a bit longer. Some ovens run cool and it may take a bit longer to cook than 10 mins for some people (watch my Mid-Week Tip on "If you like to bake) it explains why some ovens run hot and cool and what to do about it :)
Yes these brownies will get like that if you bake, allow to cool, and then pop them in the fridge overnight. Don't add any more flour, that will make them cakey :) Enjoy!
Hmm you could use semi-sweet but I find they tend to become to sweet after that. But if you prefer it, you could use, but just reduce the sugar by 1/4 cup. Yes if you use a smaller pan, the brownies will be thicker. Keep at the same temp and time, check at 10 mins, if a toothpick comes out clean they are done. If not they may need another 3-5 mins. Enjoy!

I don't understand how these brownies could have cooked and come out perfectly at that temperature for that amount of time.. i followed the recipe EXACTLY and they came out wet and severely undercooked (basically raw) so i kept them in for another 30 minutes, and they came out perfect. gooey, moist, chewy. it tasted amazing so I give you credit for that! i just don't get how you can successfully bake brownies in only10 minutes.. maybe there's something wrong with my oven. but i still loved them anyway!
lucentlynx Ah great question. It really has to do with the depth of the pan. My pan is very shallow about 1/2" and that's why they bake so quickly. If you are using a deeper pan, then yes they will take more time in the oven. Hope that clears things up? :)
Love this recipe! Quick tip from my experience: if you just made brownies and love to enjoy them warm, cut them with a plastic knife instead of metal. It will slide right through and give you perfect edges every time! :) just make sure they're not too too hot!
Sure, you should just bake them longer. This recipe can vary depending on the size of the pan you use (smaller pan, deeper pan will take longer to bake) and your exact oven. Some ovens can run hot or cold (you can see my Mid-Week Tip on Oven Temp for an explanation why) Def try them again, but just don't take them out until a tooth pick comes out clean :)

Oh yes of course! I have found the best flour for baking are the rice flours or the garbanzo bean flours (or just regular "Gluten Free" flour will also work) just stay away from almond flour, that's a bit too grainy. Enjoy!

Just made this but with a much deeper baking tray... Added a few extra minutes on the oven but still came out runny. Hopefully after an hour it will settle but even if it's liquid I am drinking it all down!!! (Secretly tasted a little my goodness was it good) Thanks so much Beth! Love your recipes :)
It just helps deepen the chocolate flavor, but you can certainly omit it too :)

Nope no need to adjust either :) To mix in, you can either add them into the batter as the very last step, or my preferred way is to pour the batter in the pan, smooth it all out, then sprinkle the nuts on top. I love to add chopped hazelnuts, or almonds or walnuts or pecans, all great choices! But the combo of the hazelnuts and chocolate mimics the flavor of "Nutella" and is really good! :)
Thanks Beth for a very informative video. I have developed my own brownie recipe after numerous attempts. The hardest part to get right for me was the cooking time. I found that the ideal was 320F for 40 mins, since it gives the brownies a nice chewiness that I wasn't able to get with shorter bake times on higher heats. 375F for 10 mins really makes sense though. I will give it a try the next time I decide to indulge on brownies! ;)

Hi Beth! I served this tonight for our Thanksgiving dinner and everyone liked them. I used salted butter and it made my recipe a little bit salty (or so I thought). I guess I should have used unsalted butter. That's what I'll do next time.

Aw you bet! Yes depending upn the depth of your pan, you will need a longer cooking time. If a toothpick comes out "sticky" that's OK but running you should let bake a few mins longer :)
When I make brownies I usually add chocolate chunks to it and it makes them even better. Xx
Yes for a deeper pan you should cook probably 12 mins. Just stick a toothpick in the center and if it comes out clean they are done :)

Thanks for putting the weight measurements! I live in the U.S. but I've always had a heavy hand when it comes to measuring out flour and recently bought myself a digital kitchen scale and it's been awesome for baking xD
Yes make sure you used real butter, not margarine or any other butter sub. And also be sure you are using real AP flour (not pastry flour) if all else fails just allow them to bake a bit longer. Some ovens run cool and it may take a bit longer to cook than 10 mins for some people (watch my Mid-Week Tip on "If you like to bake) it explains why some ovens run hot and cool and what to do about it :)

Yes these brownies will get like that if you bake, allow to cool, and then pop them in the fridge overnight. Don't add any more flour, that will make them cakey :) Enjoy!
Hmm you could use semi-sweet but I find they tend to become to sweet after that. But if you prefer it, you could use, but just reduce the sugar by 1/4 cup. Yes if you use a smaller pan, the brownies will be thicker. Keep at the same temp and time, check at 10 mins, if a toothpick comes out clean they are done. If not they may need another 3-5 mins. Enjoy!

I don't understand how these brownies could have cooked and come out perfectly at that temperature for that amount of time.. i followed the recipe EXACTLY and they came out wet and severely undercooked (basically raw) so i kept them in for another 30 minutes, and they came out perfect. gooey, moist, chewy. it tasted amazing so I give you credit for that! i just don't get how you can successfully bake brownies in only10 minutes..
maybe there's something wrong with my oven. but i still loved them anyway!
lucentlynx Ah great question. It really has to do with the depth of the pan. My pan is very shallow about 1/2" and that's why they bake so quickly. If you are using a deeper pan, then yes they will take more time in the oven. Hope that clears things up? :)
Love this recipe! Quick tip from my experience: if you just made brownies and love to enjoy them warm, cut them with a plastic knife instead of metal. It will slide right through and give you perfect edges every time! :) just make sure they're not too too hot!

Sure, you should just bake them longer. This recipe can vary depending on the size of the pan you use (smaller pan, deeper pan will take longer to bake) and your exact oven. Some ovens can run hot or cold (you can see my Mid-Week Tip on Oven Temp for an explanation why) Def try them again, but just don't take them out until a tooth pick comes out clean :)
